Learn how to make Silky Smooth Chocolate Paste that can be used straight after its set. No additional kneading required.
Recipe
(this makes a medium firm paste)
500g White Compound Chocolate
250g Liquid Glucose
5ml Water
Adjust the amount of chocolate used for a firmer or softer finished product. More chocolate for a firmer paste and less chocolate for a softer paste.
To make a coloured chocolate paste, replace some or all of the water portion with gel food colouring (depending on how dark you want to colour it) and mix it into the glucose before adding it the chocolate.
To make a pure white chocolate paste, use edible Titanium Dioxide, mixed with water to make a paste, before you add it to the glucose, to prevent the small lumps that occur when adding TD as it is a bit harder to mix in than other powder colours. Or just use white gel food colouring (which is usually made with TD, just already in a liquid state).
