Making Red Wine Salami at home with Italian Piero

Learn how to easily make Italian Salami at home with Piero. In this Salami video he shows us another flavour of salami: Red Wine infused Salami.
He shows just how easy it is to make your own classic italian salami. Even if you've never made it before just follow the steps and if you have any questions let us know!
INGREDIENTS:
- minced pork (1 Kilo) 700g Lean Pork Loin & 300g Pork Belly. You can ask your butcher to mince slightly larger pieces or cut a piece of shoulder of pork at home into small pieces!
- Sea salt to the weight of the meat (29g)
- 1 teaspoon vinegar
- 1 teaspoon fennel seeds
- 1 teaspoon black pepper
- 10 black peppercorns
- 20ml Red Wine leave a garlic & Clove in it overnight
- Hog sausage casings - ask your local butcher for some.
- If you like it spicy add some chilli flakes.

Looks delicious, and no nitrates or starter cultures. I like that you dried it at about 4.4 Celsius in a regular home kitchen refrigerator. This is why it had a pleasant soft texture. I use a large three glass door refrigerator solely for dry curing but it is a challenge to keep the strong fans from over drying the surface of the product. This problem does not exist with home refrigerators. I manage to control it, but it is a challenge. Keep up the good work!

I'm a real fan just subscribed sir. I have read in scientific research paper that red wine and garlic curing is equal to using nitrates.. I want to know if crushing the garlic into the wine would make for better preservation? Italian Americans and Blacks like myself Love garlic... While I understand Italians from Italy don't enjoy the pungent taste like we do here in the states.... I googled the research paper and you can to... This is definitely old school Mediterranean meat curing technique! Thank you for bringing us real Italian tradition. NEXT IS CALABRESI SOPRESSATA HOMEMADE??? PLEASE?? I need a replacement for pepperoni ( Italians recommended this too me for my pizza)

Hey thank you for watching and the comment! The garlic isn’t used for preservation it’s for the flavour so no need. Preservation is made just by drying it out so it will be okay! Let us know how you get on :)

Hello Piero, I’m definitely going this a try, just out of curiosity everyone’s room temperature is different, some are 68*F (20*C) all the way to 72*F (22.2*C) or higher what is your room temp. you’re hanging the salami. Thank you

This says 20ml of wine but that's only about a 1/2 oz, it looked like more.
