Peter gets a late start making sauerkraut this year. So, instead of using freshly picked cabbage, he is using the cabbage stored in the root cellar, still as crisp as the day it was picked. As he chops and salts the cabbage, he gives a wee bit of history on the making and consumption of this amazing food.
