In this video I make Yacon Syrup for the very first time.... One more step toward Self-Sufficiency! It really is a pretty simple process with a rewarding result.

I live in Sikkim and it's the 22nd state of India. And i have plenty of yacon in my field, i didn't know anything until i came across your video and after seeing it, i started looking for more information about it. Thankyou💜

I have a bottle of Yacon syrup from Yacuna and it’s lasted so far 3 months opened I think it’ll keep going all year. It’s very tasty similar to chocolate but does contain. Low glycemic but it does contain fructose and glucose so maybe not totally Keto but a little better than sugar and more natural :)

Too thin and not reduced sufficiently to store. You should be turning that 1.5lits into less than 150ml of Yacon syrup imo. It should be thick to store with low % of water. Here in the UK they don't get as sweet. If you store them indoors for two weeks and sweeten them before juicing you'll get much less juice but a better 'ratio'. Likewise, in hot countries where they grow varieties that get very sweet before they're picked you'll get way better ratio too. I'd prob have turned that into 100mls of thick syrup and used it more sparingly, but i'd store happily for 6 months in the fridge like that. Never lasts longer than that, no matter how much I grow. The kids love it ofc ;) Oh, and wash under the tap with wire wool. You'll take off 100% of the skin with a stroke. Much easier and less wasteful than other methods imo.

I live in Washington State. I juice around 100 lbs of tubers and get a between 1 and 1.5 gallons of syrup. I get about a 10-1 ratio of juice to syrup. I use a champion juicer, I can juice 100lbs+ without it overheating.

I just recently heard about Yakon Syrup in a recipe for ginger snaps .... sounds like it is easy to make. I noticed you ate a slice. What does it taste like raw? Thanks for the video. If you do find out the shelf life, be sure and post it!

Hi Sharon, the Syrup is pretty easy to make for sure, nothing technical, as you can see from the vid. We mostly eat our Yacon raw... its delicious this way.. its very watery and crisp, the flavour is slighly sweet, I discribe it as being like a savoury pear, or I slight sweet raw carrot type flavour, but much more refreshing. Our syrup kept fine for about 2 month and that wasnt even in the fridge, so probably longer if refridgerated, but I yet to find a clear answer on that too. Yacon is pretty easy to grow too, depending on where you are in the world. Let us know how you get on, good luck and thanks for watching ✌️🌿

Thanks for sharing. Didn’t even know Yacon existed until I saw this video. Definitely going to make an attempt at growing it today. Any tips on fertilisation or should I just treat it like sweet potatoes?

Hi Nneka, We find them very easy to grow, we grew them in the bed right next to our main sweet potato crop this year, so the growing conditions were very simular. Yes, absolutely its a good substitute ... homemade and homegrown 🙌 if you'd like a clear Syrup, peal first... if you like rustic and the added goodness from the skin, just scrub like I did, keep the macerator section of your juicer clear too so you don't end up with lumps of plup sneaking in, if your juicing in bulk. Hi, they juice better when they are fresher and the Syrup still sweetens with the cooking/reducing, letting them sweeten more first would work though too, just may need to juice a few more to get the liquid volume 💚 Thanks for watching ✌️🌿

We don't yet sell any, but we do hope to start sometime ... we will see how all the rhizomes over winter and if we have lots to spare, maybe this year around the end of February - We lost all of our first batch we had stored in pots during the big freeze we had in december ... the ones we dug up in our most recent Yacon video here ru-vid.com/video/%D0%B2%D0%B8%D0%B4%D0%B5%D0%BE-9fdqyKertME.html ... but we hope to have more still. You can get several dif types of Yacon ... I think we have 2 here atm 🙏

Hi, I've never tried it in baking, I use it in Raw Slices or as a drizzle mainly - any recipe that has Agave Syrup in, it can be subsituted for, I expect it would work in cookies with the right recipe, not sure if it would be a straight swap with sugar in a standard recipe, but there will be cook recipes out their using Agave for sure 😊 Thanks for watching ✌️🌿

Hi, Thanks glad you enjoyed the vid - its growing tips that you need to order for Yacon, kind of like a crown. We bought our first ones on ebay and now we replant each year and keep extending the amount we grow. Hello, thanks for sharing your video. I've just made some syrup and it's quite runny even though I've simmered it for 5hrs. Is that normal or should I boil it down some more. Awesome, thanks, Jodi.

Hi, It is quite runny, not as thick as Agave or Honey, but defo a bit thicker than water, mine usually reduces by about 2/3 i'd say, but I would say its maybe more of a gentle boil to get it reduced. If it tastes good, i'd leave it this time and just enjoy it as it is, then maybe next time try using a slightly higher heat and see how it goes, if it sounds thinner that what i've described. Glad you found our vid and given the syrup a go - good on you 🙌✌️🌿

Hi, Not something I've come across before I'm afraid, so don't really know unfortunately - Yacon in itself is very good for your gut bacteria, but Alcohol is unfortunately a toxin to the body I believe, so I wouldn't really class anu alcohol as healthy myself ... maybe other than herbs medicinal tincture (which are only taken at 5ml does) ... The wine I guess may contain less sugar than conventional where Yacon can be used as a sweetner, but on only guessing - How does it taste out of interest?

Hi Rozelle. Yes, you can make/buy yacon syrup and use it as a replacement to honey, Agave, sugar etc in certain recipes, I guess it wouldn’t suit everything, I wouldn’t use it for preserving like I do sugar, but anything where the sugar is just acting as a sweetener 👍✌️🌿

My juicer is just a cheap one that I bought from Lidl, its not even got a brand name ... probably made in Europe... Any Juicer will work though 👍👍👍 Thanks for watching ✌️🌿

They are very different … different plant family, different texture, taste etc, the only thing similar is the way they look/shape of tuber. Hope that helps and thanks for watching ✌️🌿

Hi Marietta, we have an Apple press and plan to use that for a bigger juicing batch this year and for an off grid/electricity saving option, we’ll use the same method as when we press apples… check out our previous cider making pt1 vid if you’d like to see 😊 I’m planning to look for a self propelled/off grid juicer/manual juicing methods in the future though too for smaller batches of stuff, so stay tuned as will share no doubt✌️🌿

Food processor & squeeze juice out via clean tea towel or cheese cloth. I did it this way & it worked fine.

I have heard there are some warnings on side effects from Yu on syrup do you know if this is just from commercial additives in bought syrup or something in the plant that applies to home made as well

Hi Maureen, Certainly none of the super food guru's that I follow have ever mentioned any issues, only singing its prasies for being a good sugar source for diabetics and that the inulin is good for gut bacteria too... and it tastes delicious. I did come across a couple of RU-vids that had titles indicating side effect warnings, yet when I watched them it was all just click bait and were actually promoting Yacon. However, I would always recommend doing some digging yourself in relation to any health concerns you may have personally. I can however confirm that we have used both the syrup and eat HEAPS of raw Yacon will no ill effects, we have no health concerns and are used to eating LOTS of fresh and raw veggies. It may be in reference to inulin sometimes giving people flatulence, simularly to Artichokes, however we o not find this with the Yacon either. Hope this helps and thanks for watching ✌️🌿

Just wondering if it could all be done over 4-6 hours in a slow cooker on low? Also there is such a thing as Yacon sugar. Not sure if this is just the powdered freeze-dried flesh or if the sugars are what is left after it is all boiled down to a solid. I wonder if anyone has fed yeast on it to make wine or distilled into alcohol?

Hi, i've not tried it in a slow cooker ... it would be good if you could ... but you may need to leave the lid off as I believe the cooking process evaporates off the water content of the juice and leaves you with the sugary syrup. I like the idea of a wine though, I'm sure this could be done ... and it is a plentiful crop for us so it would be a good way to use it up and preserve, in essence, toward the end of the season may .... I have plans to experiment a lot more with homemade wines in the future! Let us know how you go if you try any of the things you mention. 👍✌️🌿

The first time I made it I did it in a slow cooker but it doesn't reduce the same. I left the lid sideways and then the liquid in the slow cooker was able to reduce. It worked. But you better have a big crockpot! Or do as I did, started on the stove to reduce down, and when it was time for bed and it wasn't done, I poured it into the crockpot.

Hi, I said it smells and taste a bit like Horlicks 😆 Horlicks is a Malt based powered drink you can buy here in the UK, a bit like how you get instant hot chocolate, (I used to have it sometimes when I was younger), somethings about the smell of the Yacon Syrup brought this to my mind 😃 You may or may not of come across it depending on where abouts you are in the world, thank you for watching our vid ... and for asking too 👍✌️🌿
