Nixtamalized Corn Chips
Ingredients
2 cup Dried White/Yellow Corn
Salt
1/2 cup Maize / Corn Flour
(You may need to adjust the quantity depending on how the quality of your corn)
2 cup Ash / Edible Lime
Water
Instructions
Add corn in a pot and pour enough water so corn is completely submerged.
Add ash/lime whatever you are using in the pot and cover the pot with a lid. Let everything boil for about an hour or until corn is tender.
Thoroughly wash corn. Grind corn with water until you have a smooth batter like consistency. Add water little by little only, so you can get the grinder going.
Tranfer the mixture to a tray, and add salt and maize flour. Make dough and let it rest for a few hours.
Take a small amount of the dough and roll it into thin tortilla/roti. Cut it into shape of chips. Now, you have two options either bake them in an oven or cook them on a skillet from both the side till they are crunchy.
Serve with salasa and enjoy!
