Well done Chef John. It's notoriously hard to make roti canai at home because of all the space needed to flip/toss the dough, but you did great under the circumstances. Barely a hole in the dough too. 11/10 from a Malaysian.

@@ingeborg-anne Well the pros at the roti canai shops here slam it on their work surface to help flatten the dough, then massage it into discs with their palms.

I have been watching Chef John videos ever since I was in college, and now I'm already a home cook for over 10 years thanks to him. I always tell others that Chef John is my teacher who doesn't know me. I'm a Malaysian too so it really made my day seeing this video being posted!

I used to live in Malaysia. I’ve craved this since I left. It’s been almost 30 years since I’ve had this taste in my mouth and I greatly appreciate your contribution. I’ve searched before for a recipe and never could find one that compared. This hits the mark. If I had four thumbs, all of them would be up.

Good job Chef John! My only tip is to not be afraid to really (I mean REALLY) smash the roti canai after its cooked. I find it really makes a difference in the texture. It should look like a cloud (fluffy) after being smashed. So don't be shy, and just let out all your frustration and anger on the roti canai :)

Just as bagles, donuts, congee or muffins are the go to breakfast food items for some cultures, roti canai (or as I call it, roti prata) is the go-to for people in Malaysia. I love having it with fish or lamb curry.

Well done Chef John!!! Being from Singapore, I can assure you that they smush the canai just as you would. Only crime here would be serving only one piece. These are so delicious you can never stop at just one!!

Being a viewer since 2007 learning how to make crepes, I’m very happy to see one of our local dishes featured here. You have the approval of Malaysians alike. The crunch is spot on, the fluffing was correct and even the gravy is really good. You can also just douse it with condensed milk if you wanted a sweet version. A very good pass. I’d say all you need now is a glass of teh tarik.

The recipe makes a ton of the lentil "dip" and it's actually a great curry base for a fast meal! I seared some chicken cubes with ginger and garlic, threw in a bunch of green beans, then when they were half done, added the lentil curry and simmered it for 10 minutes. Served over rice - quite satisfying. Thanks!

if you all dahl lentil dip, you could also try a tarka- onions fried brown in butter with turmeric and cumin which will always perk up boring old lentils

I use a peanut butter base instead of tomato (because someone in my family hates tomatoes) and it gives a lovely rich and savory flavor instead. You should try it!

As a roti canai fan myself, that was legit! The only thing was, when we smoosh the cooked roti canai at the end, we slap it with more force till the palms of our hand just meet to get finer cracks, maybe twice or thrice. Its a quick process. The square shape you went for might be a bit more awkward to do so though. But fun fact, variations of the roti canai such as roti susu (a milky version) or roti milo (with Milo in it) does often use the square shape! Overall loved the vid!

the humble roti canai served with daal and some curry. i used to order a telur mata with it. wash it all down with a teh tarik. either this or nasi lemak with fried peanuts-anchovies mixture and a sweet spicy sambal sotong was my given choice of breakfast back in my days in malaysia. miss those early morning/late night meals

We add spicy potato or sometimes minced meat inside these flat breads in India We call them 'mughlai paratha'

We have that too in Malaysia. We call it murtabak/murtabak. Since Malaysia is multiracial and multi ethnic, our food are a mix of different cultures. Some of us are even mix of different races.

it's obviously a form of paratha and thus of Indian origin; apparently it is the water in the butter turning to steam that makes the layers or flakiness, as in croissants, which is why it needs butter rather than oil. I wonder if it works with wholemeal flour , but probably not; I'll have to try it and see.

It looks pretty good! If you’re ever in Malaysia at a mamak stall, ask for “roti empat segi” (lit. square bread) if you want freshly made roti canai. The round ones are “mass produced” and may or may not arrive crispy. 😄

Malaysian here. Well done Chef John, as you said with your lack of experience, you actually made a roti canai from scratch AND the dhal curry to go along side with it is nothing short of fantabulous. One needs a special skill to make these, especially the Traditional way. There have even been Roti canai making competitions here before. The only thing I was really waiting for Chef John to do was to 'hulk smash' the bread side ways before serving lol

Are those ingredients added to the dip or the bread? And if to the bread,would it be between the layers as you fold them?

@@flowercook3915 Yes the ingredients are added in between the layers. After stretching the dough, add the eggs or onions or banana slices then fold it and carefully lift and put it in the pan :)

When visiting relatives in Malaysia we have roti for breakfast as much as we can I love it served with the curry sauce and my husband likes it sweet with bananas and condensed milk and teh tarik . You’ve inspired me to have a go we like in England so hard to get good roti here

As always, Chef John, you have made a whole meal look easy to make and even easier to get the details right. Thank you! I'm going to make the flat bread. I was thinking that the water could be changed to milk for a more traditional taste. (Since the original recipe uses condensed milk) Before I do that, I will make it the way you show in the video because "water" seems to be the most commonly used liquid. It appears to be from India originally. As a quick, vegetarian type flat bread used with lentils or dal, the water seems consistent with the overall intent of the food.

We have many different flavours of roti canai ranging from roti canai with onions, eggs, to bananas, to cheese… even sardine…. Mayb you can even try to make your own flavor ! Another thing, you are missing a vital sauce for this! You need sambal!!! :D

فطير مشلتت صغير. We have a similar bread in Egypt,its called feteer، made the same way except much bigger, this version saves time and a loooooot of effort & i love it! The Egyptian version is traditionally eaten with either honey, molasses,cream or various types of cheeses, a perfect soul food as i imagine this one will be,thank you chef john for this recipe.

@@scoundrell it was amazing, my wife and son loved it. It was also super easy to stretch the dough. I used lot of butter when making the Flatbread so it was very very filling, more than I would like. I have 4 dough balls left and will try to make it with less butter, or I will have heart attack!

I've been making an approximation of these lentils (minus the paste) for a couple weeks for breakfast prep. Spoon out a small bowl and throw a egg on top. Great quick meal.

Just adding on to the hundreds of Malaysians that came out of the woodworks, I'd be more inclined to try Chef John's roti canai made with butter than the ones here typically made with margarine! The red lentil curry dip looks more flavourful than some of the ones served here!

We call this "Paratha" in our cuisine and it's my 2nd most favourite home-made bread ever. Chef John, you definitely did a tremendous job with it. As you are gonna practice I really really hope tha next time you prepare a "Beef Vuna" (a curry item of beef which isn't totally dry or too gravy, somewhere in the middle in that ooold sweet spot), alongside that curry dip. Trust me; you'd certainly have to thank me later! 😅

Don’t be afraid to enthusiastically smash the roti after cooking! It’ll still hold together, well done Chef John, looks super yummy! You can go thinner while stretching out the dough for more crispiness.
