Malva Pudding
Flour 150 grams
Milk 50 ml
Baking powder 1 tsp
Baking Soda ½ tsp
Butter 40 grams
Brown Sugar 50 grams
Egg 1
Apricot Jam 15 grams
Apple cider vinegar 1 tsp
For Sauce:
Evaporated milk 200 ml
Brown Sugar 100 grams
Butter 50 grams
Water ½ cup
Apricot jam 50 grams
Method for sauce :
Cook everything together in a sauce pan for few minutes & use accordingly.
Method:
In a stand mixer bowl mix butter & sugar till creamy. Add in eggs. Beat well.
Now add all dry ingredients gradually along with milk & vinegar.
Pour batter in a deep dish & bake it at 170C for 35 to 40 minutes until golden in color.
Remove from oven & pour hot sauce on top. Let it sit for 20 minutes before serving with custard.
Date Pudding
Ingredients
Dates 200gm
Water 280gm
Brown sugar 150gm
Plain flour 120gm
Baking powder 2tsp
Baking soda 1tsp
Eggs 2
Butter 60gm
Ingredients for butterscotch sauce
Butter 100gm
Brown sugar 1cup
Cream 1cup
Vanilla extract ½ tsp
Method for sauce
In a pan add butterscotch ingredients cook for 10 min and set aside .
Method
In a pan cook together pitted dates & water, when it starts boiling remove from heat , add baking soda , stir and allow to cool.
In another bowl sieve toghetr flour and baking powder and keep aside ,
Now in a large bowl mix together butter and brown sugar till fluffy , now add eggs one by one beat well , now add date mixtures in it and fold in flour mixture , now pour this batter in ramekins bake on 160 deg preheated oven for 20 min and serve with butterscotch sauce .
Island Smoothie
Ingredients
Pineapple juice ½ cup
Husk 2tbsp
Coconut milk powder 2 tbsp
Chilled water ½ cup
Caster sugar 2 tbsp
Yogurt 3tbsp
Crushed ice 1 cup
Mint leaves for garnish
Method
Blend together 1½ cup pineapple juice, 2 tbsp coconut milk powder, yogurt , 2 tbsp caster sugar, water, well, serve chilled, garnish with mint leaves,
