Common practice in alot of restaurants Marco himself always did it in his working days, easier to taste with your fingers and wash them then use up all the spoons
@@hilmsay4134 From my understanding and recollection, it is because he has retired from being in BoH (ie, the kitchen), he still operates some restaurants in varying capacities but because he doesn't actively stay and cook in a (professional) kitchen environment, he does not like using the term chef, and refers to himself as a cook now. Its connected to him returning even his Michelin stars, when he transitioned from being actively in kitchens cooking/supervising to then not doing so.

I'm paraphrasing, but he said a chef masters the art and a cook is still learning. He said before he still has 'masses' to learn so doesnt refer to himself as a chef. He has held this opinion since his 20s...dude is a cooking god and a culinary philosopher. The highest caliber chefs in the UK who he worked under all said he was a special talent!
