You can use almost any piano tone on a keyboard. Just make sure that you have things like auto-chords turned off so that they don't get in the way.

For the Yellow parts you can use electric guitar. It works for me

I have a Yamaha YPR-50 and it only has 5 instruments, Grand piano, elec. piano, harpsichord, organ, and strings. The red parts sound okay with the strings, but the yellow parts with the harpsichord don’t sound the best. I’m pretty sure this is in Bb major btw.
