Mario Kart Midnight uses Riivolution patches which means it can be played on a modded Wii, Wii U, or Dolphin emulator.
On Wii or Wii U, you must first install the homebrew channel.

On Dolphin, you can right-click your game and select "start with riivolution patches". You'll need to download one of the beta builds.

Playing online on Wii or Wii U is easy. Go to the online menu like normal and connect to the Wiimmfi custom servers. On Dolphin, you need to extract your NAND from your modded Wii or Wii U. You cannot play online on Dolphin if you do not have a Wii or Wii U. I personally struggled to get it working so I'm not sure what the best tutorial is to link. But look around and I'm sure you'll find
something. Dumping the NAND on Wii U is different from on Wii which tripped me up a bit.
