Marmite vs Sodastream - will it carbonate?

Well this was foolish, but I have no regrets. The sodastream machine did need a very thorough internal cleaning afterwards.
To carbonate the Marmite I dissolved a large spoonful in hot water and then chilled it to make it more receptive to carbonation. It took a lot of carbon dioxide, but didn't seem keep to hold onto it, so releasing the pressure was time consuming and messy.
But the results? Not gonna lie - I'd drink it again....

I do like Marmite, A LOT, but I really didnt like Marmite made into a hot drink. I tried it once and one sip was enough to know my body rejects it in every way possible.

The proper way to carbonate is to create a slightly thickened concentrated syrup of marmite. Carbonate only water, then slowly mix the marmite syrup into the carbonated water and let the whole thing settle. You'll have a better, less messy result in the end. Mixing in this way maintains as much carbonation in the water as possible. It always works best to mix in flavored syrups into carbonated water than trying to carbonate stuff already mixed, like when trying to carbonate milk.

Soda fountains dispense soda water and pure syrup simultaneously. Gravity does the mixing as it falls into the container. There is no mixing being done in the machine itself.

The funny thing is, marmite/vegemite or similar yeast extracts are usually just beer making waste that they reduce to a paste. So quite literally it is just non alcoholic Guinness.

A surprisingly delicious accompaniment to an egg and bacon breakfast is (especially when hungover) a 50/50 tomato juice and beer juice. Just be prepared to write off the rest of the day, though... ask me how I know.

Not a carbonated story this but Marmite related… When the jar has been emptied don’t throw it away. Swill it with warm to hot water to dissolve what is left and add the contents to a shepherds pie (vegetarian options are available) for an extra flavour boost. Even Marmite haters love a shepherds pie with added Marmite 👍

Its somewhere halfway between veggie stock concentrate (sortof) and MSG. I thought it was OK on buttered toast but I got the jar to cook with. Its definitely a really good addition to chili, though only like a 1/2 to 1/4 ts for a whole crock of chili.

On the topic of carbonated savory liquids, it sometimes happens if you make home-made yogurt, i.e. ferment the milk yourself. Don't know how advisable it is to do today, but back in the day of my grandparents, it was a thing. Apparently sometimes the yogurt bacteria just go crazy and make it fizzy.

you can make it with almost 100% success with kefir. Milk and some kefir grains, put it in a sealed vessel and, a couple of days later, you get some sparkling yogurt-like drink. We used to make it in tiny jars in a fine dining restaurant some time ago, guests used to love it :)

It's more likely for the same reasons beer wont keep a head in an unclean glass. CO2 prefers acidic environments + low temps to stay in solution. Fats/oils help it to come out of solution and Marmite is full of fat like chemicals. Same reason carbonating Irish Cream didn't end well.

When I used to run a brewery when we carbonated the bottles for the protective atmosphere, we always had to leave the sealed bottles to settle for the gases to balance. If opened too soon they would always fix. I have found this to be the same with the soda stream, if you can mix the syrup and water the day/night before and leave it overnight the bubbles are smaller and have a better mouth feel. It also doesn't fix half as much (regardless of whether it's cold or wam)

I don't mind vegemite, and there was another one years ago that didn't take off what was it vegemite Isnack 2.0. maybe that was just the name change but there was a less salt lighter coloured one as well. At school we used to call it Vaginamite. of course we get it everywhere here down under.

But I did have untreated sinusitis back then, so you prompted me to go check my brand new pack from much more recently, aaand… it smells fine. A little bit fermenty, but nowhere near as strong as some pungent misos I’ve had over the years. And living near a brewery on blooming(?) day (when they let the yeast foam up) was 10000x stronger. Now THAT would make me feel sick on some days. But this is totally fine. If you really can’t stand that yeasty smell (I know it’s technically not a yeast in natto but shh) then I guess the mild instance here might give you a hard time. Or maybe the version you tried was… some particularly pungent, extra-aged variety?

Someone probably already said it, but its so fizzy and doesnt want to be carbonated because marmite water has a lower saturation point for co2 and has a lot of nucleation sites for co2 to turn into gas

And for those who indulge in the Marmite in the normal way I have a suggestion. Take a slice of bread, butter if you like, add some Marmite but not too much and then add some strawberry jam. In a way it's like chocolate with chilli and is surprisingly good. 🤔👍

I live not far from where Sodastream is made and now I now why marmite is not sold around - it's so people won't have unsmart ideas of combining the too. This by the way reminds me that in ancient Rome there was a drink of vinegar mixed with water called Posca, this for sure sounds like experiment-worthy.

Yup. My friends in the SCA say that one of their typical refreshing drinks is balsamic vinegar mixed a little bit into water. The idea is that if you feel dehydrated you drink some of it until it stops tasting good.

Clive, did you know you can make carbonated custard? About 15+ years ago I witnessed Carole Vorderman drink carbonated custard on stage in front of an audience. The event was a live recording of Dave Gorman’s (English comedian) BBC Radio 4 show “Genius”, at the Mermaid Theatre, London. Listeners were invited to send in “genius” ideas to make the world better, and the best/craziest would be put to the test. On that day, carbonation was one of the ideas. Dave Sodastreamed various food items such as gravy, for the celeb guests to try. After a while, most of them were looking decidedly green, or refused to try Dave Gorman’s carbonated concoctions. Carole, bold soul that she is, tried them all, and even suggested custard. Dave dutifully Sodastreamed a jug of the stuff, and Ms Vorderman downed the lot, declaring it was nice, and that she liked the vanilla flavour! The audience were making lots of “Eeew eeew” noises in the lead up to her drinking the custard, but gave her a massive cheer and applause when she downed it in one. Definitely one of the oddest things I’ve ever seen.

I was there for that recording and was about to post the same thing. I also remember a sequence which never made it to air where somebody suggested having temporary dogs that would die after something like two years and Brian Sewell really railed against it and said how wonderful dogs were. And I remember the horse bike.

Probably still tastes better than a certain brand-name cola here in South Africa which has taken it onto themselves to remove all the sugar and replace it with artificial sweetners. Thank you Clive for asking the hard questions and going the extra mile to help humanity in its quest for knowledge!

Yes, of course I also watch your tech videos, equally entertaining AND instructional but... Your "fizzy" videos tickled my curiosity so yesterday I bought a soda carbonator and started to fill with CO2 everything I can put my hands on (liquid, of course...) and hell yeah I am having a lot of fun!! 😁 So, consider yourself guilty for showing me the way to carbonation! As a marmite fan, I approve this message. Sadly though, when I saw the notification I immediately imagined you trying to carbonate straight marmite without dilution. Will it? Who knows, maybe after a few days of absorbing in the fridge. But I gotta imagine the foam would be far more spreadable than the usual stuff 🤔 Still sounds like the diluted version is something I'd try, might make an amazing addition to a beer batter

Marmite is a yeast product so thinking of carbonated liquid yeast product there once was a limited edition Marmite with brewers yeast that tasted not unpleasantly of salty beer. I make my own chilli Marmite and Vegemite. After using not quite a quarter of a jar as normal- this is just to leave a gap in the jar- I microwave it for about 30 secs till it is liquid. Then I top up with my favourite hot chilli sauce and give it a jolly good stir and let it cool. This has the following effects: 1) that it is now a nice easily spreadable consistency 2) the taste is so amazing that you can sup it out of the jar. Normally eating just a whole teaspoon of Marmite would make me lose the will to live. The best chilli sauce I found was jalapeno and ginger that the Co-op were selling. On its own it's stomach dissolving weapons grade, but it does amazing things to Marmite and compliments it in the most unexpected way. It is powerful so add with care. Vegemite works really well too but it doesn't microwave the same, goes kinda soft and takes more stirring. If it gets too hot it expands out the jar in the most amusing fashion whereas Marmite just sort of explodes as it boils over.
