This reminds me of my paternal grandmother who loved making angel food cakes back before the advent of stand mixers. My dad says she’d always admonish him and his brother not to make loud noises while the cake was cooking or it would deflate. Naturally curious, one day dad went to the oven and made the loudest noise he could. He says he yelled & jumped. Sure enough, the cake fell flat.
You can adjust your stand mixer with the screw on the neck so it doesn't touch the metal container. I can hear metal on metal. These machines need adjusting ever so often.
What is the purpose of a tube pan? is it for having a solid cake versus and layer cake? And why would someone want a solid cake? And why is that tube in the middle? I have all of my life never understood why a bunt pan (tube pan) exists.

Martha can you use honey for the sweetener instead of sugar I have a husband is diabetic and I love to make that cake but use honey as a sweetener because he can tolerate it?
My mom used to make me a angel food cake every year for my BD, until I was 39 when she passed. Thx for sharing, I will have to try for myself in 2021. It’s a beautiful cake and those eggs are gorgeous
I grew up watching Martha on PBS. She is the one who inspired my love of baking. I always enjoy her teachings, she makes everything seem possible for anyone to accomplish. So glad I found her on RU-vid. She has made my quarantine time worthwhile!
Thank you Martha, l hadn’t thought about making an Angel Food Cake in quite a while! I recently taught my four year old Grandson how to separate an egg. (He’s been cracking them since he was 2&1/2) I taught him the “Crack & Scoop” method. I love watching him, the expressions on his face are priceless! He apologizes to each and every Egg as he breaks it in the bowl!
My larger KitchenAid Stand Mixer is gonna get quite a workout this year because I’m gonna try to make angel food cake! Lighter dessert! Downside is, I don’t have an angel food cake pan!
I watch many channels and they are great in their own way, but I have yet to come across anyone better than Ms.Stewart this is something that she was blessed to do. Thanks for teaching us all and sharing your beautiful gift. I've learned quite a lot.

Martha, I've been a fan of yours since the late 90's and I've always wanted to make angel food cake though I need to get a tube pan. I don't suppose it'd work in a bundt? I must pick out this one quote, "cook these with the heads of 20 elderflowers." Ha ha, yes, I'll get right on that. I dream about having a garden, who knows, dreams come true sometimes. Does anyone know if Martha Stewarts mom is still alive? I remember watching her make real polish pierogies on Marthas show years and years ago and I always enjoyed her on the show- she was the only one who could boss Martha around and get away with it! She had lots of wisdom and no nonsense! Blessings from Canada
I was growing up with Martha and I actually imagined that one day I was in her studio watching Martha baking, cooking, planting and crafting. Hahaha miss the classic Martha
Those Angel Food cakes does look great and I love eating them and wished to be there to help you with eating some of those you made, Martha. Seeing you make and add the syrup, and other additions to the cakes left me hungry and wanting to taste them. While in the Air Force and stationed at one base I got to work in the food service kitchen part time and enjoyed that job more than I did my regularly job as I could eat some of the food the chef's cooked before the meals was served and I got hooked on some foods I had never eaten before and I always raided the pastry room before leaving for the evening to get some of the cakes and pies they had for the next day.
Doesn’t anyone cross check the recipes with videos? The recipe in the link differs in many steps and ingredients than the one on the video. This is like the 5th time this has happened with MS video recipes. Whatever happened to Martha being know for being a perfectionist, seems like her team doesn’t care as much about being precise. For example: Martha uses 14 egg whites, the recipe says 12..?? Ironically at the end of this video Martha says baking is a science that always has to be precise!

Angel cake with coconut cream is my favorite, and along with raffaelo balls to start off before the cake,as for drinks Piña colada Baileys, What do you think Folks
I have a very old, aluminum angel cake pan. No feet, No raised middle funnel. No removable bottom. The way I cool it upside down is silly, but it works. (beer bottle filled with water and bamboo sticks meant for gardening. Lol!) Using offset spatulas to pry the cake out is a pain. Clean up is a bit of an ordeal. I have so little room in my tiny kitchen, I don't want to get a new one that would take up room I just don't have. The pan I have must be really old (maybe my mother's!) I have to put some of the batter in another pan since it overflows if I don't. I wonder if recipes differed that much in the past that my pan is small. - - Maybe I won't replace it for sentimental reasons, so I just have to put up.

You are probably the only one that could convert me to liking Angel Food Cake. I liked baking it so far, I just don't like the egg-whitey taste. Your cakes just look beautiful!
