Ingredients:
For the Stuffing-
2tbsp Mustard Oil.
Salt.
1tbsp Dry Mango Powder.
1tbsp Fennel Seed Powder.
1tbsp Turmeric Powder.
1tbsp Red Chilli Powder.
2tbsp Coriander Powder.
For the tempering-
2tbsp Mustard Oil.
1tbsp Cumin Seeds.
1tbsp Mustard Seeds.
1 cup Chopped Onions.
1tbsp Ginger-Garlic paste.
1/2tsp Turmeric Powder.
1tsp Red Chilli Powder.
1tsp Coriander Powder.
Salt to taste.
1 cup Tomatoes.
1/4 cup Cashew Nut Powder.
Handful chopped Coriander.
Method:
We will heat up a cooking pot on one side and prepare the stuffing on the other. Take a bowl and mix 1tbsp Dry Mango Powder, 1tbsp Fennel seed powder, 1tbsp Turmeric Powder, 1tbsp Red Chilli Powder, Salt to taste, 2tbsp Coriander powder and 2tbsp Mustard oil in it. Mix these together nicely. Take 2tbsp Mustard Oil in the hot cooking pot, add 1tbsp Cumin Seeds and Mustard seeds to it. To this we'll now add 1 cup of chopped Onions and saute. As the Onions are getting brown fill the small sized Eggplants/Brinjals with Masala stuffing we prepared. Add 1tbsp Ginger-Garlic paste to the Onions and saute them nicely. Now to this we add 1/2tsp Turmeric powder, 1tsp Red Chilli powder, 1tsp Coriander powder and Salt to taste. Mix it together. Add 1 cup chopped Tomatoes and cook everything together. A dash of water on the tempering and put the stuffed Brinjals into it. Add some more water over it. The Masala should coat the Brinjals nicely. Cover it with a lid and let it cook for about 5-10 minutes. After this add 1/4 cup of Cashew nut powder and handful chopped Coriander over this and mix it nicely. Plate it nicely and serve it hot.
