In today's episode we will take you beyond the popularity of dal bati churma, kadhi etc, and introduce you to some classic Marwari dishes from the state of Rajasthan. For this we have come to Gurgaon at the house of Komal and Jatin Thanvi. They are a resident of Faloodi in Rajasthan. Komal is a budding home chef who shares her culinary activities through her RU-vid channel ( / @komalgajjaskitchen ) .
They have invited us to experience a huge Marwari Thaal comprising both popular and lesser known dishes. For snacks we had mirchi vada, khoka and dal paratha with tea. Jatin shared so many references about the Marwari culture and way of life. After that we moved to the kitchen to witness the lunch preparation. There was a long line of dishes that Komal had planned for us like badiyan faliyan, govind gatta, ker draksh, kachar faliyan, lapsi, bajre ka paratha etc. Most of these dishes are prepared with native ingredients sourced straight from their hometown.
The cooking technique of most of the curries were quite similar but the taste varies due to ingredients. The everyday spices used in this cuisine includes cumin seeds, coriander powder, hing, kachari powder and red chilli powder. During the cooking process Komal briefed us about the dishes while Jatin informed us about the stories and cultural connotations associated with them.
Finally we all sat down together round the humongous thali with nearly twenty food items. As per the Marwari culture we started with the sweet and then moved on to the main dishes and breads. Also two very important components of such a thali are papad and pickles.
