On this occasion, Jocas Kitchen prepared a delicious Marinated Octopus (χταπόδι ξυδάτο σαλάτα). And at the end, a delicious and fresh Vinaigrette. Greek-style Octopus Vinaigrette is a delectable dish that combines the freshness of the sea with the aromatic essence of Mediterranean flavors. Poached to perfection, tender octopus serves as the star of this dish, providing a unique texture and taste. The octopus is then marinated in a vibrant vinaigrette made from extra virgin olive oil, tangy red wine vinegar, and fresh lemon juice. This is beautifully balanced with the addition of crisp diced vegetables like bell peppers, cucumbers, and cherry tomatoes, infusing a crunch that contrasts wonderfully with the soft octopus. Finally, a generous sprinkle of herbs like oregano and parsley, along with the sharpness of minced garlic, completes this dish. Greek-style Octopus Vinaigrette is a culinary delight and a celebration of the bright and healthy flavors of Greek cuisine, making it a perfect summertime dish or an appetizer for any occasion.

Ingredients: marinate and soften the octopus.
1st. preheat oven 200gd. c
2 kilos of octopus. Good clean.
1 fresh oregano leaf.
10 balls of whole black pepper.
1 large clove of garlic
4 tbsp olive oil
2 tbsp of red wine vinegar.
As in the video, put the octopus between aluminum foil and parchment paper.
And add the ingredients above. Close tightly so that no steam escapes.
And do not uncover for an hour in the oven.
After the hour, remove and open carefully. It will be good and soft. Put a knife in, and you will see it.
Now cut the octopus into pieces and put it in a glass container with plenty of space.
Add the octopus and add:
4 bay leaves
1/2 tsp whole pepper.
1 tbsp ground oregano.
2 whole garlic.
And cover the octopus with equal parts olive oil and red wine vinegar.
Move well and cover. To the refrigerator for 24 hours.
At your service:
Cut the octopus into small pieces and add olive oil, red wine vinegar, a pinch of oregano, small heads of chives, chopped fresh parsley, and fresh chives sprigs. Incorporate well and at the end, check if you lack a little of what has already been added. Enjoy!!
