A classic alternative to traditional Absinthe service
The Absinthe Frappé was purportedly created by a bartender named Cayetano Ferrer at The Old Absinthe House in New Orleans Louisiana around 1874. It's impossible to know if that claim is true, but we do know that he was certainly known for making a good one. The Frappe was a popular morning drink from the late 1800's til Absinthe was banned in the US in 1912, heralding the prohibition to come. Luckily for us the Absinthe ban was lifted in 2002 and we can enjoy this classic alternative to traditional Absinthe service. Absinthe and the way it is served definitely deserves it's own episode and I am working to make that happen soon!

Very interesting recipe. I usually go by this one: 1½ oz. absinthe ½ oz. simple syrup (1:1) 2 oz. soda water 8 mint leaves 1 lemon wedge the lemon wedge is muddled in the shaker tin. I guess up you made the more classic version which I now have to try too. So shopping for an Anisette.

Oh, speaking of Absinth. I'm doing a version of Van Goghs Garden going something like this: 6cl Absinth 2-3 cl Simple syrup. Half a lime Whole kiwi A few slices of cucumber Muddle the fruit in the bottom of the shaker. Pour the simple syrup and absinth. Ice. Shake. Pour in a big rocks-glass without straining to much, you want the black seeds in there. It's fantastic.

@@randomfrancais3360 You are absolutely right, I have known some people from the Boston area who use an Americanized single syllable version of Frappé to describe such things as we call "milkshakes" elsewhere. These things happen. Maybe we could improve the situation by noting that if you press "Option" and "e," and then, "e," you should get an "e" with an accent aigue. I am hopeful that this might smooth the ruffled feathers on either side.

The barfly’s pronunciation and spelled description of this drink’s name is intentional, and he is using it correctly. Because a frappe’ and a frappe (no apostrophe) are two very different drinks, and they’re pronounced and spelled differently. A frappe’ is a coffee based beverage, whipped with crushed ice and completely blended together. A frappe (pronounced “frap”- the “e” is silent) is something they make in the northeast, New England etc.; very popular in Massachusetts and Maine, USA. It’s almost like what is known as a milkshake in the rest of the USA. They call it frappe instead; and technically speaking that is the correct name, with the modern definition of “milkshake” being the term that’s actually incorrect; even though it’s the name most familiar to people when they think of ice cream and milk blended together. But actually that does not technically constitute as a milkshake”. Here’s why- Traditionally a milkshake was considered milk and syrup and crushed ice, SHAKEN until blended; “milk” + “shaken”= milkshake. Then the frappe was created when someone added ice cream to the mix. This was the traditional use of both terms. But somehow, and somewhere, along the line, everyone just started calling a frappe a milkshake (everywhere other than New England that is), even with the ice cream added, and the milkshake term evolved to mean something different than what it was originally. A frappe and a milkshake are still different though, in that a frappe is VERY frothy, and lighter than what everyone else calls a milkshake. Glad this American could educate some of the commenters on this thread, excluding the original poster of this comment of course. This is NOT directed at them. Because the original comment and commenter was neither rude nor bigoted, like some others on here who criticized Americans as “stupid”; despite their own selves not being educated enough to know the difference between a frappe’ and a frappe, nor their different pronunciations, spellings, meanings or ingredients.

I think that frappé is just frappé, doesn't matter on what it is composed...there are just different versions, greek make it with coffee, others not. But basically is the same, in my humble opinion. Anyway, english native speakers often mispronounce foreign words...that's a matter of fact, like non native ones mispronounce english words. A good example is how they pronounce "maraschino", speaking about liqueurs...the correct pronunciation is "maraskino" but they often say "marasheeno". Leandro is quite precise, most of the times, though.

I've been a fan of absinthe since it was brought back. I make my own from an extract and it's a bit stronger than what you buy in a store. It's a subject of debate, but, the effects of absinthe are different from alcohol by itself. The effect is not the slightest bit hallucinogenic, and it is subtle. One of the poets of the Belle Epoque, (Son nom m'a échappé!) described it as producing a kind of creative order in his mind. I think that hits the mark. But, to feel the difference, you have to have just the absinthe with no other "competition," and the atmosphere should be one of quiet conversation rather than what you might find in a bar or club. It might also take you a few trials to perceive the difference. Nothing beats absinthe on a warm sunny spring afternoon. I can hardly wait for next year.

When I search anisette, what come's out here in Québec Canada, are liqueurs like sambuca for example. Is this what you are using in this recipe? Seems a few drops wouldnt change much to the drink?

does the ice decrease the amount of flavour from the absinth just how ice in whisky does? is that why they add extra anise liquor maybe?

Coldness decreases flavor but it would do it to the anisette too. I think the added anisette is really to play up the licorice flavor over the other botanicals and maybe to add a bit more sugar

The problem with packed ice drinks is you need to use a straw and straw suck. This is not from an environmental standpoint, I just hate drinking from a straw. Glad someone is around to us rip all the pebble ice. 😂

Why the anise liquor? To make it a cocktail. The rule of thumb is a cocktail has at least 3 ingredients; this one has absinthe and water as the other two, if you don't want to change the taste of the primary liquor (the absinthe) the anise liquor makes sense

Depending on where you are located, there should be several US domestic absinthe options that are about half the price of Pernod and still good. Try St. George or Oregon Spirit. If not, Lucid is also decent. A lot of retailers offer smaller 375 ml sizes of absinthe as well.

So this is absinthe served in a “under diluted” form...? Absinthe + water = traditional absinthe preparation (well I guess sugar cube for some if that’s your thing). A few of these would certainly get you bombed pretty fast though 😂

It's generally best not to have more than 3 glasses. She's seductive, the thujone buffers the alcohol so you don't feel the typical cloudy, foggy feeling other spirits give you, so you don't feel drunk. I can tell you from experience, it is THE WORST hangover EVER. Overdid it ONCE when I first started drinking it back in 2003 and have respected it ever since.

If you drink it properly, 1 shot (dose) of absinthe to 3-5 shots ice water, you'll be fine. There's a trick to watch in the louche to know when you've added enough water, further dilution is experimentation to bring out the other botanicals. Watch the louche as you add water. You'll see a thin layer of the pure absinthe floating just on top. When that disappears, you've got the perfect louche. Proof ranges from 53% for some blanches, to 72 for the vertes. Sugar GENERALLY isn't necessary, but if you do please do not ignite it. That was never how absinthe was drunk. Some novelty brands go higher but over 72% and that's just nuts. 3 glasses is usually enough. Drink it with respect and all goes well. Having said that, I can affirm you do not want an absinthe hangover. It's worse than whiskey. Santé

Pernod makes absinthe with wormwood. In fact they're one of the oldest makers of Absinthe. We love our ice.
