Masterbuilt Gravity Smoker 560 | 3 Month Review |
I can't believe it has been that long already! I have done quite a few cooks and smokes on this grill!
In this video, I go over some cool features, function, things I like, and things I don't like. After 3 months of pretty heavy usage, I have a good gauge on things that bother me, and things that I really enjoy.
The Masterbuilt Gravity Smoker 560 is a cool piece of technology, and I am having a great time using it!

Regarding the lack of flame: note that the fan shuts off when you open the lid. Press the lid switch down next time you open the lid when searing. You will see the flames. Trust it like your fridge light.

I own this smoker and the 1050. You can easily create a damper for the 560 and 1050 out of some stainless and there are plenty of companies that sells the damper conversion. Also, if you want flame, you can put wood chunks in the ash pan, that is how you are supposed to smoke on this grill anyways. Since this is considered an "indirect" grill, they are not made to, and was never intended to, have a direct flame underneath what is being cooked. The wifi is so you can control temp and keep an eye on meat temp via your phone. One last thing. Use lump charcoal instead of briquettes. Better heat, more efficient. I think if you bought a aftermarket damper for your grill you will enjoy the temp control a lot and it will conserve even more charcoal for you. I also read on a forum or something where they asked masterbuilt if you can put wood chunks with the charcoal since it can use lump coal and they said yes, but no more than 1.5 lbs of wood chunks per hopper full.

Hi Nathan have you ever used all wood instead of coals? Can you fill the hopper with wood or would that cause too many issues?Or just use the ash pan for your wood? Thanks Dan.

Great video .. after 30 cooks on my pellet smoker. I decided to sear on it .. 😂 it went up in flames 🔥 😩 I let it burn off .. them threw water on it .. 😂😂😂😂 I can see the metal like it was brand new .. I was trying to scrape that grease for the longest.. I wasn't to scared but boy .. a average person would had called the fire department 🚒 😅😅😅 great video .. I think I need this in the family

I just got the Masterbuilt Gravity 1050 3 weeks ago and I love it and yes a direct flame touching your meat could really hurt. 😂😂😂😂

Was about to purchase this grill until my Masterbuilt electric smoker died 29 days after the 1 year warranty expired. Company basically said tough luck, warranty is up. Wouldn't trust them with another$. Obviously their new slogan is "Make it as well as you must to last to the end of the warranty!"

I liked your video, I've had mine for over 6 months and I'm very happy with it, although I would like to mention that the fan on my grill actually melted, the fan frame melted on to the blades. I have replaced it already. 5:45 I'd like to recommend adding a second charcoal grill with smaller holes in it, I added 1/2" SS expanded metal (found some at work) I swear charcoal will last waaay longer. LSS Mods make stainless steel mods for these. They’re a bit expensive, but will extend the life of your grill substantially.

Had to return my 560 . kept getting faults ! worked great for two weeks !! love the idea of this smoker ! im gonna wait for a much better quality unit !

Thank you so much for the video I just saw this on fb market place & was wondering if it was any good. Your video made my decision easy. I already have gas bbq machine and was considering to get rid of it but your comment about direct flame made me realize that I can use that for direct flame once the meat is cooked. So thanks again. Oh & ur comment, like flame touching my meat was hilarious 😂😂

If those are the only negatives that's pretty good. I use a charcoal smoker so having to manually start the charcoal seems like a minimal complaint

That is my next machine to get sir. Right now I'm learning with a standard basic master built. Ribs are still my fav to smoke. Sliding off the bone.

Thanks for the follow up video! That's funny you mentioned the old round Weber for briquets... That's what I grew up around and oh man does it bring back memories every time I even look at it! I still keep mine around... I like putting the briquets on one side with a couple pieces of wood barely touching the briquets... I sear the meat then rotate the grill/meat around to the other side and use the lid to ignite and then smother the wood so that I get that smoke flavor. I'll always have a round Weber briquet BBQ in my arsenal.

I just bought mine over the weekend...haven’t put it together yet but of all the research on getting the flame is to hold the lid open about halfway, not keeping it closed. Can’t wait to fire mine up..btw, I really like your channel

I have had my 560 now for six months. I bought the extra racks and also the hvy duty cover as in Florida we get nine feet of rain each year. I also bought a dial temp gauge. What I learned: - It will hold temp very good - Don't use the bottom grate for long smokes, use the middle rack with a drip pan filled with 4cups of water to keep your meat moist on long smokes. - If you're doing long smokes build up your hopper with a lil charcoal and some chunk wood then charcoal until you get to the top. For pronounced smoke ring drop 2 or 3 chunks in the ash can before you light it up. - If you're not doing long cooks then don't fill your hopper up it wastes charcoal. If I was doing steaks I would only put in about 15-20 briquettes. - when you smoke with the middle rack you might have to dial in 265F to get 225F at the middle rack. It depends on outside air temp and if there is winds. You will learn your grill. - Don't forget this thing can go as low as 160F so you can smoke salts, paprika, BBQ rubs to infuse smoke smell and taste into them. Don't forget you can cold smoke cheeses and fish also. - Crank it up to 700F to reverse sear and use as a pizza oven! You made a brilliant choice this grill/smoker is so versatile. Just only use enough charcoal for what you're cooking. I only fill mine when I am doing long 9-12 hour smokes. Enjoy and God Bless!

@@docohm50 This sounds ideal for me, your tips have been really helpful. My only concern is, can you get a flame easy to sear those steaks at the end? At the moment i have a kettle bbq, reverse sear is easy, i have a Weber Smokey Mountain for smoking slow cooks, but it needs a lot of attention to keep those temps stable...i'm hoping this ticks all the boxes, its just how to get those flames easy to sear...any tips or experience you can share?

Great review and I agree with your accolades and complaints. Having said that, I have had more luck searing meat as long as I have it up to 650 or 700°. The Wi-Fi works great! Had to leave the house for an hour during a smoke and I was able to check the temperature on the meat from the grocery store. LOL

Just had to pay way over the odds for one of these as I'm in England and they are far more expensive over here. Had some awful £80 barbecue for the last 4 years as I only have 1 or 2 bbqs a year but now that we are coming out of lockdown I feel like I want to have people round more often (I live alone) and have more bbqs, I hope mine doesn't have the faulty switches like a lot of these apparantly have. Going to be weird getting used to one I have to season and clean out all the grease after each use to stop grease fires and the fact I can just leave it to cook while I have a few beers and socialise. That was one of my problems hosting bbq, you miss out on a lot of socialising and stuff as you focus so much on cooking meat to perfection for everyone. Cheers for the videos

This grill could actually be considered an offset smoker with a temp control fan. It is not a direct flame cooker. It seems getting a a flame in the smoker box could burn it down since you cannot control the air source to starve. You never want fire in a seasoned smoker box especially if you can’t control it.

I probably will get one of these in the future, but I'll make do with the Masterbuilt 40 inch digital charcoal smoker that I have. It's not a gravity fed system like this one, and it has its own pros and cons, but for the moment it does what I want it for. My biggest surprise from watching this video is this series of smokers are not that more efficient the model I have.

Man, that sounds like an awesome smoker but I agree with you. You have to be able to sear and the chimney is kind of a bummer.

I watched several of your videos, and decided to go with the gravity feed over the pit boss. For the price, you get way more in this than the pit boss. If you are familiar with charcoal, and even if you are not, it’s easy to use. Getting it lit is the hardest part. (Not hard) hope everything holds up and I do not have any issues.

Been wanting one of these! Gonna pick up the 1050 when I get the chance too! lol. Work like 90 hrs a week plus I'm remodeling my basement right now. Maybe I can catch one on fall clearance......

Got the 1050 it is pretty awesome. Some problems with the wifi control but very happy with the purchase! Threw in a pizza stone and it worked great at 500 degrees!

I’m leaning toward the 560 because I don’t need the space of the 1050. And the charcoal hopper is the same size on all of them so a full hopper with give you 10-12 hours of fuel on a 560 but only 8 hours on the 1050(according to masterbuilt site)

@@authorityfigure1630 yeah. Heard that but I like to through a couple backyard bbq's a year and I find myself utilizing both my 560 and my pellet to get all the meats done in a timely manner. So I would probably be able to get it all done on the 1050. So I could potentially get rid of my pellet smoker and my off set so I can reclaim the room out back.

The Wifi thing connects to the MasterBuilt app, and shows you your internal temp and timer, and you can also set both from the app.

I bought a pit boss 820 a few weeks ago ... thats your fault ... LOL i actually got a new one for 300 his mother had given it to him and he burned it in but never used it. i guess offerup is good for something once in a while huh .... thanks so much for this vid Steve .... as much as i hate flare ups i probably wont every have one but obviously you like the charcoal flavor as opposed to the wood pellet flavor and thats cool

I loved my Masterbuilt for the 2 days it worked. The remote stopped working and failed to update or connect. After 12 hours of troubleshooting and youtubing I had to send it back. There are a lot of people who have issues with this machine. The materials are cheap and the charcoal shoot metals come off and get into the fire. They have no customer service only email and to this day never responded back to my issue. Be warned before purchasing this.

Better than a pellet smoker in so many ways, basically an automatic offset with autofeed The starters work so well to start much easier than using a torch, and the app works well too Better bark by far due to smoke quality with more control over smoke levels by far You want lots of smoke and 275 or 300f no problem just put chunks in the firebox or on top with a little piece of steel, pellet smoker is stuck with whatever smoke level it does even smoke tube doesn't match real wood chunks period Much wider temp envelope than a pellet machine except recteq no others run 700f

I too have pros and cons on these grills and I agree with the ones you pointed out. I have the 1050 and I have hot spots all over, so meat temps vary quit a bit. I was thinking of putting some expanded metal at the bottom to get a longer cook time from the charcoal. Good luck with yours brother!

Just received a 1080. I am considering putting a shallow drip pan under the main grates on top of the diffuser. I have some foil drip trays from traeger that I used on my pellet smoker. If I tilt it to a corner I hope I can get the grease to run off there to the grease tray...maybe it will result in more even cook and easier clean-up. What do you think?

Why is everyone going on about an “open flame”? Open flames burn and char. If you can’t get a steak to sear at 700* you might want another hobby.

Waaah. For a tenth (or less) of what this thing cost, I built my own grill in my back yard out of fire bricks and concrete pavers. Inside, I have a home-welded grill, and the smoke and heat follow a natural current over the grill. I can remove the grill, and cook a pizza on the paving stone. It can reach over 900 degrees with a lot of good dry wood. Doubles as a smoker by directing the airflow. I built it this way because I plan to live off the grid, and have to innovate.

I saw the larger model and I have their smoker the thermo temp smoker. Love this smoker. Wish I saw this but would love to see a start to finish use, talking about what charcoal to use for grilling and cook a steak and a start to finish doing a smoked brisket or something. Good video, now let’s see a smoke and grill from start to finish.

I had my 560 for 6 months. I use the middle rack when I do pork butt, ribs, brisket with a large foil pan below filled with 4 cups of water. I alternate the hopper with regular charcoal and chunk wood filling it up. If I am doing steaks I only use 15-20 briquettes. I will set temp to 225F and pull the steaks off at 105-110F. Then I see temp to 700F, add a additional) handful of briquettes to hopper, it takes 10 minutes to go from 225 to 700F Sear the steaks about a minute on each side and you got a steak house style steak at home for half the price!

loved the videos, I have a Masterbuilt Eletric Smoker that needs to be replaced. I like the construction of this smoker. It is higher and easier for me to get to. Do you find the intense of the smoke is greater in this vs the Pit Boss?

I appreciate that! The smoke is absolutely more intense and rich in the gravity smokers due to the combustion of coal and wood. It’s much quieter as well!

So from what I’ve experienced with different smokers, these pellets/charcoal grill/smoker combos are not for grilling meat like an actual propane/charcoal grill. The pellet smokers I’ve used are basically ovens fueled with pellets. My propane smoker uses wood chips. Way better for smoke flavor. In my opinion the pellets don’t smell the same as real wood

This one is a whole different animal from Pellet Grills. You literally can do it all with this one. I have/had a Traeger and definitely not for grilling, but this Masterbuilt gravity is hands down the best multi-use.

@@MrBigKid I have sitting in my Closet, some add ons for my 560, it is better back vent cover, a cord wrap that I will install on the back of the side shelf and front folding shelf. Once it warms up here, in May 2022 I will get to installing these.

@@PaleHose28 no I'm not comparing anything. Just pointing out how useless comments like your original 1 is. I have a $7k reverse flow trailer smoker, a trader 34, OKJ Offset, a kettle cooker, and a regular charcoal grill with a shelf that raises and lowers. Point is they all serve a purpose. Yes you can 99% of the same stuff in each but the there will be small difference in the finish of each. To each their own, no need to poo poo on what anyone is using. In the end the goal is to have great bbq and have more people making it. That's what's do great about our hobby, our pastime, our passion... it's the variety of choice from beginner, to world champion.

That’s not good, it will put creosote on your food that adds a bitter flavor and will cause your tongue to go numb. Been there, done that.

If your a backyard cook but an experienced backyard BBQ cook (I have a Weber 22” & Masterbuilt Electric Smoker ), would you advise to buy this type of Charcoal Gravity Feed or a Pellet Grill? I cook everything you listed at the top of your video. Brisket, pork butt, ribs, chicken qtrs, wings, sausage, etc...

Both the pellet grill and gravity will nail those foods for sure! However, I would say if you want to punch it with more flavor... the gravity charcoal is a great option. BUT if you want more convenience and efficiency, the pellet grill. Im happy to own both, but I still use my pellet grill out of convenience more.

Sure. It’s literally as easy as turning a dial to ignite. The charcoal grill requires a manual fire to ignite, not a big deal at all however. The charcoal grill also has an ash pan that will need to be dumped more often. It’s not difficult to do any of these tasks, but the pellet grill is quicker to ignite :)

@@MrBigKid I bought th Masterbuilt 23 Dec 2020 since t5hen I have been able to use the grill one time. Their customer service is non exitance, For the price I would not recommend the product.

So I see you are using charcoal briquettes, not lump charcoal. If you have to add charcoal during smoking, do you get any of that acrid smoke flavor in the meat like you would with adding new briquettes to a standard grill? Thanks!

I think It's hard to get a good sear using charcoal alone, lump or briquette because they don't combust. I'm wondering if you added some lump hardwood chunks to the hopper when trying to sear if you'd get more flame

Thats a tough question... but if I could only choose one... I think it would be the Pellet Grill. The PB820 is so easy to use, and with the searing door / plate.... I can NAIL steaks on it! The Masterbuilt is an amazing grill, and I love it... but it is a bit less convenient, and less efficient... though packs more flavor. I'm honestly happy to have both!

My concerns is, is it really a grill? Or is it just a smoker? I have 2 pellet “grills”. Only one is an actual grill, but it’s not a smoker. The other is a smoker/oven and not a grill. Most of the pellet grills are terrible grills. This seems to be the case for the Masterbuilt as well.

Question I just bought a 560 series but I set it at 275 and does not want to spot there keeps going hotter is that because I need to use the thermometer in the meat or it should stay at 275 even with out a thermometer in the meat thanksss

I felt the same exact way when I bought mine. The door felt ultra light. This thing retains heat WELL! The temperature swings are very small,l as well. The materials they use feel very light, but seem very well insulated. I can actually rest something on top of the grill while smoking.

Just a quick question... If for example I filled the hopper full of heat beads and only cooked a steak, then shutdown the cooker leaving the majority of the hopper full, how would I add would chunks for my next cook if I was cooking low and slow? Am I right in thinking I'd have to remove the heat beads and add my would to the bottom of the hopper, the fire it back up? Thanks in advance.

Your down sides are not really an issue, lol. There is a slot for a fire stick light the fire stick and that’s it. Definitely don’t want an open flame inside bro, you will end up ruining your grill.

After the 3 months have you noticed much decay in the Firebox area? Also any issues with door and lid switches not reacting when they should? That seems to be the big flaw with these Masterbuilt gravity fed units.

I haven’t noticed any decay at all, just some slight surface rust, which can be mostly cleaned off and re-coated with oil. The one switch on the top of the hopper has deformed a little due to the heat, but functions fine.

So I have a Smoke Vault that I use for smoking and a Weber Tailgate grill just for regular grill but I miss me some charcoal and I really want to get one but the reviews on Amazon are full of complaints on assembly/build quality and ppl say the company has lousy customer service or practically none at all. Can you let us know if you’ve had any problems with yours? Also any thoughts on the Z Grills pellet smokers? Nice vid!

I Have a pellet grill smoker and does not produce enough smoke when smoking brisket and pork shoulder. Does this smoker produce a better bark/smoke flavor versus the pellet grills?

Man these are basically just an autofeed offset they will do whatever an offset will do plus run muuucch hotter to sear at the end game changer I don't think theyll gain the traction of the pellet machines but they're just better in most ways

I think it would work well, The charcoal grill gets nice and hot, and control is tight. I don’t have any experience with it in cold weather though, so don’t take my word for it!

I was gifted an older Traeger 780, and I am enjoying it, I wish it had a direct fire for searing steaks option. I came across this gravity fed machines and think it's genius, I lie the fact that you can use real wood or charcoal. It needs next to no power as you manually light it, and it uses a small fan, I think I could build one of these with my backyard welding skills, does anybody know if there are plans around for these? Cheers all, from Canada !

Hey MrBigKid. I just started using my masterbuilt 560. I was having trouble conserving charcoal until I figured out you had to use one of the air/heat intakes. Now Im not getting good smoke in my grill. Which intake do you use to control how much smoke goes into the grill? and which one do you use in order to conserve charcoal so I dont have to keep filling my hopper back up?

So far so good! I definitely would through my experience! It survived a pretty bad grease fire that was completely my fault... and it was a bad one lol! The charcoal flavor is something I love, and to have a PID controlled charcoal grill has been pretty awesome!

I don’t believe so. There isn’t really a “fire pit” on the Gravity. The fire is actually inside the hopper, and the heat is directed to the grill chamber. Typically to get a flame, I keep the lid closed intill IT hits 700, then open the door. The O2, heat, and drippings kind of “flare up” then I get a nice searing flame :)

You put a wood chunk in the ash pan and when the little embers fall in the ash pan, the wood chunk is burned and produces smoke and heat.
