Sweet and Sour Chicken - my go to take out order, but this time I made it myself!
Batter:
Combine 100g plain flour, 25g corn flour, 1 TSP Baking powder with 20ml sunflower oil and 175ml cold water. Mix and set aside in the fridge.
For the chicken:
Slice your chicken breast in small chunks and season with salt and pepper. Coat in your batter and then fry in your veg oil at 150c for 5 mins to cook the chicken - we don’t want colour on this
Let that cool then get your oil to 180c and fry for a further 2-3 mins until crispy.
For the sauce:
Add 1 TBSP tomato purée into a bowl with 75g ketchup, 20g rice wine vinegar, 50g white sugar, 15g dark soy, 1 TBSP jalapeño jam (sweet chilli will work) and splash of pineapple juice.
Into a pan add your half an onion, and half a red and green bell pepper. Add your sauce and pineapple chucks and let that reduce down. Off the heat and cover your Chicken in that sauce and enjoy!
