Matteo - THANK YOU for taking the garlic out! My Italian friends say that American Italians use WAY too much garlic and then leave whole chunks in the sauce, and stink up the whole dish (and their breath for several days.)

Just FYI, I know your are probably in a rental, but you can in just a few minutes flip your hinges on your frig, to make it open towards the kitchen. Not only is Matteo a fabulous comedian but an incredible cook, who knew, so talented love both of them, they make my day , they clear the dark clouds when they begin to appear.

Has anyone noticed comedians tend to be friends with just the most unintentionally hilarious people. This is that to a complete T. I was genuinely crying laughing at nick making pasta.
Its very true and then the actual comedian takes a back seat. I think I remember it was either Bill Burr or Bill Hader who said the guys they grew up with were so much funnier than them.
Oh my god I NEED to share a story. I watched this video and then my daughter had a sleepover with some friends and they wanted spaghetti for dinner. I made Mateo’s spaghetti with the really salted water and now these girls parents are texting me and asking for the pasta brand and recipe because their daughters came home and said it was the best spaghetti they’ve ever had. I laughed to tell them it’s just like Quarter of a cup or so of salt in the water 😂 That’s my “secret” recipe!
If they don't salt their pasta water, it does make a huge difference. Although, tossing out the jar of chemical dreck and making actual sauce with tomatoes is an even bigger one.

I originally only knew Nick through Matteo’s channel and the first thing I saw when Nick joined him onstage somewhere was the rollercoaster bit. I nearly passed out from laughing and have been a fan ever since. 😅

My mom wanted to embody Nick in this video when I made this dish for my parents. It was a very stressful night for me (my dad's condo kitchen is like a challenged version of your kitchen) so I sent them both out to the living area. Anyway, even with the weird canned tomato sauce I had alongside only partially bronze cut pasta (Mutti was not available at this supermarket - alas), it still turned out pretty well. Thanks for pushing me to cook more homemade food, it's surprising how easy and tasty it can be.

Any oil cooked past it's smoke point gives off carcinogenic smoke. The oil itself is safe to eat, however, it will lose it's nutrients and in the case of olive oil, it's flavor.
