Ingredients & Notes 🌟
#1 Savory Leftover Pancakes 0:18
1 bell pepper, roughly cut
1-2 spring onions, roughly cut
75g-100g firm tofu, cut into strips (2.6oz-3.5oz)
veg oil for the pan
1 cup flour (120g)
½ tsp salt
2 tsp baking powder
¾ cup water (180ml)
→ yields 4-5 pancakes
#2 Go To Lazy Pasta 2:03
1 serving pasta/noodles (70g-120g = 2.4oz-4.2oz)
pinch of salt for the water
1 cup (250ml) store bought tomato sauce
1 heaping tbsp hummus
1 ladle pasta water (about ⅓ cup = 80ml)
salt, spices to taste
roasted sesame seeds, fresh herbs for the top
→ serves 1
#3 Vegan Tuna Bowl 3:13
1 can chickpeas, rinsed (400g = 14oz)
1 tbsp vegan mayo
1 tbsp vegan sour cream/unsweetened yogurt/vg cream cheese
2 tsp gochujang (or to taste)
1 tbsp rice or white wine vinegar
¼ tsp salt (or to taste)
1 small onion (red or green), chopped
1 sheet nori, ripped to shreds
serve with:
1 serving rice, fried until crispy if preferred
fresh bread and some cucumber, tomato
#4 Instant Noodle Salad (chatpate) 4:50
1 packet instant noodles*
1 tsp sunflower seed or olive oil
pinch of salt
pinch of paprika or chili powder (optional)
½ cucumber chopped (deseeded if preferred)
1 small onion (red or green), chopped
1 green chili (or up to 6 i guess lol)
1 large handful cilantro, chopped
juice of 1 lime
1 handful fresh baby spinach
2-3 tsp crispy chili oil (or to taste)
sriracha to taste (i skipped it)
1 avocado, chopped (optional but HIGHLY recommend)
1 tsp roasted sesame seeds
*i went for non spicy veg noodles

#5 Chickpea Crunch Bowl 7:10
1 can chickpeas, rinsed (400g = 14oz)
1 tbsp veg oil
generous pinch of oil
seasonings of choice
60g (⅓ cup) dry couscous
1 tsp olive oil
pinch of salt
seasoning mix of choice
100ml hot boiling water (⅓ cup plus 2 tbsp)
~3 tbsp vegan sour cream
1 handful fresh herbs, chopped
1-2 tsp oat milk, if needed
salt, pepper to taste
1 handful cherry tomatoes, chopped
1 spring onion, chopped
→ serves 1

I love blending cooked veggies (often I roast them in the oven) into a thin broth, and then cooking a small pasta (like orzo, or pearled couscous, or something like that) in it, so that I have something super comforting but still kinda nutritious.

Thanks, such good meal ideas! 😍 one of my go to’s has been the same for years, its like a taco-sallad, I’ll roast some cubed sweet potato, add some kind of mince at the end just so it gets heated through, taco seasoning and serve with diced cucumber, tomato, spinach, banana (hear me out, the sweetnes is delicious here!🙈) some yoghurt/creme fraiche, salsa and tortillas or nachos. Its pretty good! Just had it tonight😁

Lately I’ve been making a zucchini spinach avocado tahini toast! lol I sautée the zucchini first ( I cut it up rlly thin or shred it with a potato peeler) with some onions then add salt and pepper, tomato paste, smoked paprika, Cajun seasoning, then throw in the spinach and add a little water, tahini and lots of lemon juice :) I put it on some toast with some vegan cream cheese and mashed avocado and top it with sesame seeds at the end , it’s so good 😋

My go to easy meal is jasmine rice and tofu-cooked in the instant pot. Topped with raw red cabbage, tomatoes, cucumber, and avocado. Dressed with soy sauce, sesame oil, rice vinegar and everything bagel seasoning. 10 min meal.

My go to are these black bean tacos. It's very simple and quick: Put oil, onion, garlic, 1 tin of rinsed black beans, 1/4 cup broth and (taco) seasoning in a pan and heat up until the liquid is gone. Then mash it al up, add some veg of choice (I love corn and paprika). Put the mixture on a wrap or tortilla with some vegan cheese and put into the oven on 200 until golden brown. I love making a sauce on the side with avocado, vegan yoghurt, cilantro and lemon juice.

Go to meal would probably be a wrap with whatever protein and veggies I have on hand + hummus or avocado.

My current fave lazy dinner is just some gf noodles. I boil those normally and while those boil I mix some cottage cheese and an egg on the side. Add some spices (salt, pepper, paprika, nutmeg, vegeta, curry and some chilli flakes) and some pasta water and mix. One the noodles are cooked I drain then, put them back in the pot, add the cottage cheese, egg mixture and stir. I‘ll add some cheese if I’m feeling fancy but that‘s basically it.

Ok, so my lazy recipe when I don't wanna cook is this one: - Pan fry diced garlic and onion until fragrant (I use frozen veggies haha) - Add in some spinach - Add canned tuna (feel free to use firm tofu or chickpeas) - Boil some rice noodles and add them to the pan along with soy sauce, worcestershire sauce (any umami sauce is ok), tabasco and black vinegar - Mix everything and there you have a quick, easy and balanced meal! - Also feel free to add any spices you like, I recommend ginger and paprika

Ein sehr schnelles Essen, welches ich mache wenn ich nicht viel Zeit habe ist: Nudeln mit einer Cashew-Soße. 1. Nudeln auf den Herd setzten 2. Cashewmus in eine Schüssel geben, dazu kommen ein guter Schuss Olivenöl um die Konsistenz etwas Flüssiger zu machen, etwas Essig, Pfeffer, Salz, Hefeflocken und wer möchte Chilliflocken. Alles gut umrühren und 3. sobald die Nudeln fertig sind direkt in die angerührte Soße geben. Wenn man möchte kann man noch etwas frischen Spinat o.ä. dazu geben. FERTIG, Zeitaufwand max. 15 Minuten :)
