Can I just say that the best part of this entire podcast was Randle saying "We've all been there..." while talking about hyperphagia - bear feeding for 22 hrs a day putting on 4lbs a day.

We've never called it that, I think folks from other states named it that to shit on us. But we don't use it every cook, and/or on every protein. Wish it wasn't named that but really I don't care that much bc it's good if you're doing it right.
Poor description of the Texas Crutch. It’s called a “crutch” because the meat, typically and primarily brisket, has stalled in temperature. The aluminum foil allows the meat to finish faster, and is typically only used under time constraints.
