I was feeling nostalgic and wanted to make my Mom Mom’s spaghetti but with a spin. For the last 10-15 yrs of her life she added eggplant to her meatless sauce and I wanted to simulate that dish but with eggplant balls instead. I slightly adjusted the seasonings to better complement my spaghetti sauce and WOW. 🤤🤤🤤 Mom Mom would have loved this!!!! Thank you, thank you, thank you for sharing.

Excellent recipe. I elevated your wonderful recipe... using most all of your ingredients but ... by adding~ chopped mushrooms - black olives - leeks chop - red bell pepper - dried oreango - (No parsley ) - dried basil ñ a little red crushed pepper - (no paprika) . The extras enhanced and took your excellect balls to a new level.. 😊
Awesome, definitely going to make Saturday 👍, was embarrassed to say before but had an accident and broke all ribs on right side and lost my teeth. Been eating soft foods, lots of eggplant Italian, japanese ect.. it's getting me through. Lucky love eggplant lol. Otherwise mashed everything, until can start pressure cooking meat to death for a while, being a hunter, butcher and pit master it's so hard without meat, but🤷, tyvm
Это блюдо заслуживает, чтобы его приготовить! Только что продегустировали: всем очень понравилось. Хочу порекомендовать готовить сразу на основе 2-х баклажанов: при жарке сильно уменьшается объем. Значит, берете 2 яйца (хорошо, если они будут домашние). Я добавила 4 листочка зелёного базелика, 2 дольки чеснока порезала крупно, томатное пюре приготовила тут же (просто натерла 4 помидорины. Запекала, накрыв сначала фольгой. Через 10' её сняла. Сыр использовала какой был ("Королевский")-получилось очень и очень вкусно! Спасибо автору за рецепт!
Quiero saber si no le queda amarga la berenjena. Me gusta mucho la berenjena, aparte de que es un sustituto de la carne. La he hecho dos veces de diferentes manera, pero en realidad no me han quedado bien. Voy a hacerlas de esa manera. Es una receta deliciosa y fácil. Bendiciones!
I wonder if this would freeze well? We’ve had a bountiful garden of eggplant this year. Im thinking of at least prepping the eggplant balls and freezing for preparing this dish later.
