I actually don't love meatloaf, for me it is just ok, but I love this meatloaf. Doing it on the pellet cooker makes it even better. Thanks to the channel "Celebrating Appalachia" for the recipe inspiration.
Recipe per 1lb meat:
Meatloaf
• 1 pound hamburger meat
• 1/4 cup bread crumbs
•1 onion chopped
• 1 egg
• 1 teaspoon salt
• 1 teaspoon pepper
• ¼ can tomato sauce
• 1 ½ tablespoon vinegar
• ¾ can tomato sauce
• 1 ½ tablespoon brown sugar
• 1 tablespoon Worcestershire sauce
• 1 teaspoon mustard
Mix the meat and other ingredients up through the partial can of tomato sauce.
Mix the rest of the ingredients together and use as a glaze for the meatloaf.
Bake at 375° until it reaches 150 degrees internal (about 1 hour and 15 minutes) then glaze. When it reaches 160 degrees internal remove it from the over/smoker and let it rest.
