Baked Spinach with eggs, and rice is an old village recipe that is comforting, and good for you. When meat was a scarcity, Macedonians relied on vegetarian meals, and got protein from eggs, beans and nuts. This hearty dish will fi you up and give you energy. After all, if Popeye ate his spinach, you should too!

YOU NEED:
1 large onion, roughly diced
1/2 cup rice
900 gr. frozen whole leaf spinach, or 1 kg, fresh
1 tbsp. Vegeta
1 tbsp. paprika
pepper to taste
chili flakes to taste, optionally
a little oil for sautéing
eggs for how many people you are serving, or how many you can get in your casserole dish
salt and pepper to taste on eggs
kisela mleko, or sour cream, or thick yoghurt for garnish
1- 2 cups of water, or more if needed
