This time, we had the pleasure of filming at Chappuman, located in Kobe Town. This restaurant offers pasta with a nostalgic flavor, which tends to cater more towards hearty, male-oriented tastes rather than the typical image of pasta being for women. Most customers opt for extra-large portions, which are offered at no additional charge.

3:48 remember never rinse your pasta. You are rinsing away the starch that is used to bind the sauce to the pasta

They are making Japanese style pasta and not Italian pasta so starch is totally not required. See 06:40 they are making ''Napolitan Spaghetti'' which is basically stir fry spaghetti with ketchup.

This restaurant's concept is to boil the pasta in advance and then stir-fry it in order to speed up the serving time and increase customer turnover. Don't worry, there are many traditional Italian restaurants in Japan.

The skill with which they tear the plastic, grab a handful of dry pasta and gently place it in the boiling water is just breathtaking. And the delicate way they grate the garlic in a food processor to coax out maximum flavor is the sign of a true culinary artisan. Has Michelin gotten them in their guide yet? If not, they should.
