The main problem is not with the trucks. The problem is with the way the course was constructed. The ditches were not smoothy dug out with uneven bumps n holes under the mud. Very natural most trucks will get stuck in such a ditch

One thing I wonder about is , doesn't the exhaust pipe get flooded in conditions like this when the car is turned off ? Is water gets into exhaust does it not damage the internals ?

I've never been into this type of an event but one thing I know that just revving up the engine any of the SUVs is not going to get you out of this mud. Infact the continuous rotation of tyres will get them into a pit and lead to loss of traction.
The new Thar would perform better if the tyres were on 285/75 R17 or 265/75 R16. Factory 18 inch is already no good for off roading since there's no good side wall, but with smaller rims/wheels you'll gain more sidewall. More rubber more tractiom.
