I love olives! I put the meat mixture in crescent roll sheets and cheese w olives and salsa and make a giant hot pocket, called taco thing. But this recipe sounds awesome!!!
Mexican Lasagna 1-pound ground beef ½ cup chopped onion 2 cups shredded cheese 1 can refried beans 1 cup cooked rice 1 can corn, drained Tortillas 1 pack of Taco seasoning Cook beef, drain, and add onion when meat is no longer pink. Add taco seasoning and cook as directed. Lay 1 tortilla (or more to cover the bottom of pot) in bottom of greased pot. Spread 1/3 of beans, 1/3 of meat, and top with cheese. (I combine beans & meat… it spreads easier that way) 2nd layer: Tortilla, ½ the rice, ½ the salsa, ½ the corn and then top with cheese. (again, I combine the rice, salsa, and corn) 3rd layer: Same as first 4th layer: Tortilla, beans, meat, corn, rice salsa and top with cheese. Bake covered at 350 for 40 minutes, uncover and bake 10 more. (I doubled this recipe) (side note, we don't add the rice because the wife likes it without but good both ways,)
I made this yesterday but had to use substitutions. Only had small flour tortillas so I used 4 on the bottom, overlapping just a bit (same with second layer), and no canned corn so used my fresh sweet corn and tossed in some olives and jalapenos. I served it with a dollop of sour cream and guac on the side and my family LOVED it! Thanks so much!
I like that this recipe can easily be cut in half, which I plan on doing. I think I'll try corn with peppers for a little extra flavor. Thanks for sharing.

I would alter this with these changes. 1. use corn Tortillas and try to assemble it with three layers. 2. add Black Olives and green chiles while reducing the corn to only One Can. 3. Rather than using two jars of Salsa. I would prepare 1.5 to 2 cups of Enchelada sauce and combine with only one jar of the Salsa. As he does serve with sour cream. Muy Sabroso
We have done this with plain Doritos crunched! We add garlic powder to our beans! We layer and call it nacho casserole! But this looks every bit as good! 😊

Excellent! I made mine with a 1/3 pound of chorizo with the ground beef and added chopped up poblano, green and red bell peppers with some sweet onions. This recipe is so versatile and simple, just great. Thank you for sharing it, God bless and have a great day.
@nancybirthman4242 No worries, many people have never heard of it or tried it. Chorizo is pork sausage, it originated in Spain and Portugal. You can take it out of the casing like Italian sausage and use it pretty much like ground beef. 😋 😁
I came up with my version back in 2001. I made mine differently. I did not used corn, but I did used Salsa, but the Salsa was little runny, and I stopped putting it in my Lasagna after that, but added it as a topping when serving. I saved half a package of Taco seasoning to mixed it melted butter to make Mexican bread. Here was how I did mine. I crushed up one large bag of tortilla chips to make the crunchy sound of a taco. Then, I put a lair of refried beans heated, then a lair of the taco seasoning ground beef, then a lair of onions, lair of tomatoes, lair of diced green chilies (you could used a can of Rotell that have tomatoes and green chilies in it), then a lair of black olives diced, then a lair of cheese. Then I repeat it a second time the same way. Then I added another lair of crushed chips and more cheese. Then I baked it. When serving, I put Salsa, sour cream and guacamole on top, and served. Then I use a brush to spread the taco seasoning butter on both sides of the bread slices, and put it in the oven to bake to make it toasted, and served with the Lasagna.
that's what I love about cooking, you can add items to any recipe and make it how you like. I add jalapenos after to my plate because the wife doesn't like em.
I make a similiar version, but no corn or salsa. I use Ranch Style beans, a can of green chilis and instead of taco packets, I use a can of enchilada sauce.
I’d drain off the fat in the meat first and also use oil free refried beans . Every thing else is just fine . I’ve got to watch the fat in my meals , I’ve gotta messed up liver .
Now how could you resist that? Cans , jars, and plastic bags of food. Just good old home cook’n. Add a sprinkle of parsley on top and that’s New York City dining ! I’m makin this one, thank you.

I made this tonight. I didn’t have any refried beans so that was the only change I made. I used a layer of Pace medium salsa in place of the refried beans. It came out perfect with a small garden salad on the side. Thanks for the great ideas and the nice videos you make!
I made something like this. My family really enjoyed it only thing i had ranch style beans at the time. And added Mexican rice too. Added cheese between layers too. I have been making something close to this for a while. I use the mexican pizza and enchilada kits from Old El Paso. I grab 2 cans of enchilada sauce and add that in and on top. We never have any waste leftovers.
i liked the idea of mixing refried beans to the ground beef. I will use that idea to make a similar dish withe black olives, green onions, diced tomatoes, of course the cheese and tortillas with an enchilda sauce. forget canned corn. if i use corn it will be frozen white and yellow.
It would be a bit more prep time but if you want it to be more solid when you slice, cook your corn ahead of time to dry it out a bit and get some of the moisture out, then when that's done put the corn aside and cook down the salsa to get rid of some of its moisture.
i do the same but with a twist. with a can of refried beans and a can of black, pinto and red beans and I cut 3 tortillas or 4 to cover the bottom. half of meat mix to go on tortillas, mix in a can of refried beans and a can of black, pinto and red beans then drained well can corn, i press in a towel, then cheese on top, again chop tortillas, then add that other half of meat mix with a can of green chilies or cut roasted poblanos some cheese then tortilla, top with rotel and lot of cheese black olive. bake good with chicken, cream of mushroom, evaporated mil and green chili, black olives. layer between tortilla, meat, cheese, corn, tortilla repeat end with cheese. bake covered. good in covered casserole in microwave. carful open steam is crazy hot about 18 mins. now im hungry as heck.
This is per recipe shown on video. Just typing it up for you. Please watch video because its very informative. Add 2 lbs ground beef in an oiled skillet. break the beef up. Sprinkle beef with little steak seasoning. Add garlic powder and onion powder. Break up and stir til beef lightly browned. Add 1 c chopped onions. Mix well and brown mixture. Cook the chopped onions til they are soft (cook it down). Sprinkle in 2 pkg taco seasoning as per pkg. Stir and mix. Beef is fully browned. Turn stove fire off. Cool slightly. Add 1 can undrained refried beans and 1 can of undrained spicy refried beans to the meat while it is hot. Stir and mix. In a oiled glass baking dish put a four torrilla. Cut a side off to fit the rectangular pattern of dish: the extra side can be placed on top to fill the rectangular dish. Spread half meat mixture on top of tortilla Add 1 can of drained corn to top of meat mixture. Add 1 jar salsa to top of corn. Add slightly less than 2 c of Mexican blend shredded cheese (recipe calls for 4 c) Add flour torilla to top. Cut sides to fit rectangle. Repeat layering as done for the first layer only for this second layer use the rest of the cheese: slightly more than 2 cups. Cover baking dish with foil. Put in oven at 350 degrees for 40 minutes. Remove foil cover and cook uncovered for another 10 minutes. Cut in half vertically. Then cut in horizontally to form 8 pieces. Take a square out using a spatula and place serving on plate. Serve with a little green sauce and a small dollop of sour cream on top.

It does look delicious! I’m going to use the southwestern whole kernel corn bc it’s packed with flavor. I also think I’m going to use some red salsa and salsa verde. Just a couple of different ways to pack flavor on the inside. Thanks for the recipe. I do love Mexican food more than Italian. But I think I will always continue to make the Italian lasagna as well bc my family likes it too. If I had my way it would always be Mexican!
I had leftover roast and I was going to make enchiladas so instead of making them up I made a layered casserole like this one and it was amazing! 😋😍😁 there's so many options.....
