I cant tell you how many times I have tried and failed to make Mexican rice. I dont know what it was- I followed my mothers steps exactly. I took my sisters advice. Ive even called on my brothers for helpful tips. Nothing- straight poop. For YEARS. Rice was usually too mushy.. or not enough flavor..always something. I gave up. Until I found your video. I figured why not? Shes either full of it, or she may actually know what shes talking about. Well I'll be damned.. i followed your instructions exactly and my rice was phenomenal! I made it and remade it 4 days in a row!! Amazing each time. I dont know what it was or how you did it but your video is magic and turned my food Amazing! Thank you and looking forward to watching more videos!
Just came on to say I FEEL YOUR PAIN. Tried to make Mexican rice yesterday for a dinner party, using the Instant Pot. And failed--twice. Rice was mushy and gross. I'm stumped. On here now researching new recipes to see what to do differently next time. Bc: NEVER AGAIN! I have bookmarked this page and will be returning the next time I want to make Mexican rice. :)
I have a friend who is Mexican heritage whose mom was a wonderful cook. She has a terrible time making Mexican rice, too, so I shared this video with her.
I too would absolutely buy a cookbook!! A CD or USB of video is also a good idea and I would buy it for any price!! It would be like having mom here telling me how to cook! ❤👍
I grew up on arroz and frijoles my mom was from Chihuahua and I cannot make my rice taste as good as hers! That said, you have a different recipe which I hope will make my rice tastier! Please publish a cookbook!

I have always wanted to make Mexican rice correctly. My brother would make it real quick with tomato sauce and onions. I think TINA pretty good, but I tried it, and I couldn’t get it just right. I am so grateful to be taught how to make the Mexican rice correctly! Thank you so much beautiful woman.

We tried this twice. The first time I did not strain the sauce, it was too strong of onion and tomato flavors. The second time it was PERFECT! I followed the recipe exactly...12 min. to brown the rice on med/low, 17 min. to cook on low, and leave it covered off heat. (I got busy making your beef enchiladas and did not "Fluff" it for 30 min. but it was soft and delicious!!!) NOTE: Your enchilada sauce is Absolutely THE VERY BEST!!! I've made it with chicken, beans, cheese and onion, and now ground beef, we LOVE it! Thank you for the detailed and patient instruction. I never dreamed I could cook such a fabulous meal until I watched your videos.

Lucky for me as a rice lover I learned about KNORR chicken/tomato bouillon base from a Mexican friend. Yes it is the best additive for your rice recipe. Cumin is a must. I’ll do it your way next time.

There are some things I make that are really good, this was unreal. For those in the lower mainland of British Columbia, Canada, Don Chendo has the quality tomatillo, puyo, guajillo and ancho chiles beyond compare and made the recipe shine. Thank you so much, it's the food of love.

Believe it or not, I do love carrots in my rice because it adds a pinch of sweetness which is a perfect combination with the other ingredients (sweet and savory) but it is optional. Thank you so much for your comment my friend. ❤️
Made my first Mexican rice 1 year ago for the homeless in our local park. I was asked to make it since I participated in the cooking the meal every Sunday. The cumin is the important ingredients plus of course the tips you've shared with us. Thank you, now I could make a better Mexican rice!

I'm Mexican and there are so many different ways that people make rice. I don't make mine like this and also do not use bouillion as it has tons of sodium. I use natural vegetable broth instead. I also use stewed tomatoes--perfect for the broth and I squeeze out the juice from the tomatoes and it's perfect. Have never used pepper or cumin, but like I said, everyone makes it differently. Thank you for your version :)

I made this rice last week and again today for dinner's side dish. Really yummy and just the right amount of spices. Adding the serrano pepper, is a great topper. Thank you for sharing.
I like the idea of adding the onion and garlic into the oil to season the oil before adding the rice. It is a sad and panicked day when I run out of Caldo de Tomate. Mexican rice is my favorite way to have rice, I will have it for lunch (sometimes even for breakfast 🤫) by itself with a healthy topping of fresh pico de gallo. I make my rice the same. I love the tomato chicken bullion. I do add chopped onion after the rice is lightly toasted, I cook the rice and onions together after onion is translucent and then proceeded to add the tomato sauce, chicken broth with bullion, Serrano pepper and the garlic I toasted to release more flavor 😋
I have made this rice several times and it is beyond delicious!! I could just eat it by itself! My son in law tried it recently and said it was the best mexican rice he has ever had :) Thank you so much for your amazing recipes!

Before I found your channel, I used to search for videos of recipes I didn't know how to make & wow, I can't tell you how much time I wasted watching really long-winded people showing overly complicated or fancy recipes that needed a lot of expensive ingredients or stuff that no one really has on hand. It was a lot of disappointment & I'm a pretty good cook, but I had not had much practice at cooking a lot of Mexican food so I started my first time looking for a video teaching how to make homemade tortillas and I found you! I've learned so many delicious, simple recipes watching your channel and I really really do enjoy your personality and you always have perfect technique and helpful tips so everything turns out so good! Ive never wasted a minute watching you and when I'm in a hurry or craving a new recipe for some good food I will always look for you first! Thanks for teaching us how to cook the best food on RU-vid!
