I’m Aussie so I’ve been going through so many videos of elote recipes and I go straight to the comments to see if it’s authentic and so many mexicans were saying it was made wrong until I came to yours and all your comments are positive so now I’m going to use your recipe and make it so I can taste them for the very first time. There’s many different ways to prepare them, so have fun experimenting with different topping combinations until you found your favorite version using local ingredients in you area. You don't use margarine, this is not the most authentic.and you're suppose to put melted butter on it, not put better in the water. Who said this was authentic? Lol

You’re two years late but I still haven’t made these yet lol will definitely use butter as I dont like margarine myself but thanks for reminding me about this recipe lol and to answer your question, other videos online have copped really negative comments from mexicans but two years ago, this video was the first that I saw that had only positive comments as well as a few mexicans praise it too which is why i said what i said. If authentic is the word I shouldn’t use then I’d instead say the recipe is good enough for me.
Like most other Mexican recipes, there are many variations . . . and, just like Italian food . . . every family has its own "favorite" recipe. So you aren't going to necessarily find the one "authentic" recipe -- every one is "authentic" unless it deviates substantially (like substituting parmesan cheese for the cotija). When I do elote, it's mostly done along the lines of this recipe, but I mix the mayo, crema, and some homemade ancho chile powder to which I add some fresh squeezed lime juice. Then I slather it onto the cooked corn (but NEVER cook corn for 40 minutes!! 10 minutes MAX), layer on the cotija cheese and dust liberally with Tajin (chile-lime-salt seasoning). Yummy!
Lol a street vendor once told my grandmother to add a small amount of sugar to the water that the corn will be added to. It make the corn sweet. We’ve done it ever since.

My mom adds sugar into the water to make them come out sweet and we put mayo, cotija cheese and cayenne powder on the corn and it taste so good! I’ve never tried it with crema but looks good
First person I’ve found on RU-vid to use the melted margarine! My fav! Thankyou for sharing this! Mouth is soo watery. Been trying to figure out what the melted yellow stuff was for years now. None of my Mexican friend can tell me what it is.

Yum, my favorite street food when I was in Mexico. I love them even better when they are roasted in charcoal. I make them for my family, but I mix mayo or creama with lemon juice, paprika, chilly powder, chipotle, salt what ever they like, so they can just coat the elote and as much as they want. Damn, I want to go to the grocery store to get some elotes right now :-) Cheers, well may be not...... Just kidding you made me crave this fabulous snack

Yesss this is one of the few recipes I've seen on here that actually uses cayenne pepper. Taijin and chili powder are hot, but the heat hits your mouth different, cayenne is EXACTLY how the heat hits from the elotero.
When you placed your corn in the pot With a butter, the heat was off right? Because you said after 40 minutes that’s when you removed it. Because 40 minutes is way too long to be boiling corn.

Carlo Nati I know Mexican elotes🌽 are my Achilles heel and make me break my diet every time without fail 🤣🙈 TBH we’ve both have gained weight over the years, but he’s really great about working out whereas I need to jump back on the exercise wagon....once you fall off it’s harder to get back on! 😅

Elote is good when the corn is good. I just boil an ear and roll it around in a bit of mayo, s&p, some mayo and whatever cheesr I havve on hand + a dash of chili powder. Yum.

I use to get these on soccer Sunday lol every weekend but I think they only used Mayo stinky cheese (grated Parmesan cheese) and Cayenne pepper. I don’t like the red stuff so I leave that off.
Boil the water and put the corn in for 40 minutes? 40 minutes? Are we boiling it for 40 minutes or putting it in boiling water, turning off the heat, and letting the corn set in the hot water for 40 minutes? I typically boil corn about 10 minutes and it's done.

Nice recipe . . . but why not use the water you boiled the corn on the cob to cook the elote cut off the cob? Makes more sense if you're going to do both at about the same time.
