This Bosnian flat bread called lepina or lepinja is very famous here in the Balkan. They used this bread to serve the famous cevapi. The tiny rolled grilled meat. But during Ramadan they upgraded this bread by putting black cumin of top of it. It may not be true to some but that's how I noticed it. Regular lepina don't have the blacks seeds but when it's ramadan season they put the black cumin. This bread is also very famous during Ramadan specially during iftar. It was so good when hot. So fluffy and airy. We love it.
INGREDIENTS:
800 grams flour all purpose
700 ml lukewarm water
1 teaspoon sugar
4 teaspoons yeast or 2 packs
1 teaspoon salt
black cumin
Procedure:
1. Mix warm water sugar and yeast let it rest for 10 minutes
2. MIx in the flour and last the salt
3. Mix for about 8 minutes and let it rest for 30-45 minutes to raise.
4. Take out from the bowl pour it in the working board and cut into 6 equal parts
5. Make a ball of the portions and let it rest for 30 minutes
6. Once it rested put it in a baking paper and make a round flat form follow the video for the design and put the black seeds on top
7. Let it rest for 15 minutes before you bake it
8. Bake for 205 celsius for 8-10 minutes
