Meju is Chef Hooni Kim’s third restaurant, tucked away behind a small banchan shop in Queens, not Manhattan :)
Unlike his previous restaurants (Danji, Hanjan), Meju focuses on traditional Korean fermented foods and has earned a Michelin star for its dedication.
Here, the emphasis is not on just eating the dishes, but on learning about the 3 essential Korean sauces - doenjang, ganjang, and gochujang - and savoring the true essence of these fermented ingredients.
You can taste the sauces Chef Hooni has personally fermented and aged over the past 10 years, as well as a 129-year-old seed soy sauce that his mentor made in Jeju Island :)
As someone familiar with fermented sauces and foods as a Korean, I’m excited to see how Meju presents and reinterprets these traditional flavors ❤️
