I bet this is how he got it to look HD, first note that the HUD is not stretched, he played this game on PC with a PS2 emulator and changed the resolution that the game engine runs at

Fun fact: there is still no Xbox emulator around that works with more than Halo lol. This is recorded directly from the original Xbox
