I'm not a good person to ask about heads but I use pinstripes or Evans EC2s. The kick I just use something the muffles it. Hihat sizzle is normal, tighten the felts on the top cymbal and even out the angle adjustment on the bottom seat to reduce it some.

Those Zildjians sound unbelievable. goodness. praise God for cymbals.
