This week’s genius technique is a special one as Kristen shares her husband Mike Dunkley’s method for tasty fried eggs. All you need is extremely hot neutral oil (such as sunflower oil) and two quick flips of the eggs to yield crispy outer edges, a tender middle, and yolks that can be either silky or firm (depending on your preference). That flip is bold ... my grandmother would fry eggs very similarly, she would use oil and get it hot, and crack the eggs in, then tip the pan and spoon oil over the top to cook the tops and then slide them all off, and that's how I've always done it too - we are flip-shy here :P

Exactly! I grew up eating eggs cooked this way. Mom basted the yolks with the oil - no flipping. I recommend an apron and runny! Yum

During the worst of the lockdown, Gabby Melian started posting her "steam-cooked eggs". I basically do that now cause it's my favorite. A dollop of olive oil, a shake of cracked rosemary. By the time I put on the toast and grab an egg, the oil is ready. Crack the egg into the pan, salt and pepper, and lid it. When the yolk is just covered over with set white, it's ready. The toast is usually done at the same time. Lacy edges with crispy rosemary and oozing yolk. No flipping is necessary.

This is such a british way of cooking eggs and fried bread, I lived in England and had a landlady who kept a frying pan about a third full of lard, fried eggs bread bacon etc in it. We (americans) used to scrape about 3/4 of the lard out before cooking and add the lard back in when we were done. Made delicious eggs.

My favorite fried eggs starts with frying bacon until crispy. Then fry the eggs in the bacon grease, splashing bacon grease over the top of the eggs. Once the eggs are done, then I fry the bread in the bacon grease. Yum😋

When I was a kid...a loooong time ago, my mom used to put the eggs in a hot pan with lots of bacon grease/oil, and instead of flipping the eggs, she'd take her spatula and fling the hot oil over the top of the eggs, so the whites would cook and leave the yolks runny. We called them "Dippy Eggs" cuz we could dip our toast into the yolks. They were so good and came out perfect every time. Side Note: if the yolks broke, they went to my oldest brother, cuz he'd eat anything. Lolol Thanks for sharing. To this day, I still loves me some "Dippy Eggs" . Actually, had some for dinner last night. 😋

That is how you make sunny side up eggs is you flip the grease on top.

@@LargeEventPlanner Actually, as far as I understand it, Sunny Side Up eggs have nearly uncooked yolks. With the grease 'flicking' method, the top of the yolks get ever so slightly cooked, when the grease is splashed onto them. If you splash the yolks enough, you can completely cook them to where they are no longer runny.

It was 1963 and my ship pulled into port in France. Taking some liberty I hit the first good looking bistro I found and ordered steak and eggs. Let me tell you while the steak was so-so the eggs were perfect. Seems that they carefully dump them into a deep fryer. Nothing compares to that. Try it. You will love it.

My approach is to cook them "almost" exactly like you with these exceptions: 1. I don't flip the eggs 2. As soon as the eggs are in the pan I pop a cover over the top to keep the grease from spattering 3. Optionally I splash a bit of water into the pan to produce the steam that will turn the tops of the eggs white. Done.

Hi Kristen…this episode made me miss my mom. Passed away years ago. This how she makes fried eggs. We don’t know how it should be anyway other way. It’s served with garlic fried rice and chorizo on the side.

I like to fry my eggs from both sides because I HATE it if the egg white isn't fully set. There's also more flavor when the egg is a little browned and crispy. And I am totally fine if this means I am not always getting a runny yolk!

I don’t make my eggs like this but when I’m at a diner and I get them like this, I love them! I grew up on fried rye bread in bacon fat. It’s amazing!

you dont need to toss them to cook the yoke, based them by tilting the pan so the oil pools and spoon the oil over the egg, you still get crispy whites but more control over yoke, i learnt this from my mother

i grew up in a family where eggs were always cooked over hard. (i know... but we, well, didn't know.) later i loved diner-style eggs - kinda like these. crispy edges, somewhat runny yolks (my preference is over medium), etc. but then i read about how the egg white's proteins get damaged in high heat (the yolks, too - that's why there's the tradition of eating yolks as raw as possible). so i started doing a very gentle almost steam-fry. pan on very low heat. use your fat of choice, but the key is to keep the heat low enough that the white cooks through but doesn't get hard or brown at all. i put a lid on it, hence the "steam-fry". when the white's close to being fully set, i often fold the egg over like a tortilla, if that makes sense (fold what was the runnier part of the white, over onto the yolk) to gently cook the yolk a bit, and the inside of the white. and that's it. when done right, the entire white is tender like it'd been poached, and the yolk is just set with a little bit of ooziness. i could eat it with anything - toast, veggies, bacon, etc - but recently i've been topping it with fish roe, sour cream, and chives. YUM!

I love my eggs fried this way! Never had fried toast before but I’m definitely going to give it a try! I’m going to try frying the toast in the olive oil with about a tablespoon of homemade ghee. Thanks guys for sharing.

In my family, each of us liked our eggs prepared a different way. I am amazed that people don't know how to cook eggs to various solidity, or textures. People are talking about basting the eggs below, not realizing this is exactly how you create sunny side up eggs.

This is how we fried egg in Puerto Rico!! As a kid we used to cook outside with Lard and this is how we used to do it!! Delicious!!

I get some oil hot, crack the eggs in, and half way I throw a knob of cold butter in and baste the top with the melted butter until the white is set and sides are crisp trying not to hit the yolk as to not cook it too much. I also make a bone marrow butter that I fry toast in. Very good flavor on the eggs n toast, I've found, after doing it a ton of other ways (I squeeze lemon and a pinch of fresh herbs on top with s&p also). Thanks for the video.

*I **_THOUGHT_** I WAS THE ONLY ONE WHO MADE "FRIED TOAST" LOL!!!* When I was pregnant I craved egg yolks & toast ALL THE TIME... So one day I was getting kinda bored dipping my slightly limp, overly buttered toast in the yolks and I started thinking about "sturdier toast"!! And I thought... "I LOVE THE WAY THE BREAD COMES OUT WHEN I MAKE GRILLED CHEESE ON TEXAS TOAST..." And I had an epiphany!! I thought what if I tried just making my toast the way I make my grilled cheese, MINUS THE CHEESE!! So I tried it and YES IT'S FATTENING AS CAN BE BECAUSE YOU'RE USING BUTTER IF YOUR MAKING YOUR GRILLED CHEESE WITH LOVE 😉 ( and again being pregnant, nobody is worried about calories!! ) But also I come from a family of very "petite" females, so even after the pregnancy & nursing I allowed the "fried toast" every other week! Now I'm excited because I can try to "switch it up" on the family and see who notices FIRST!! My great grandmother always used hot bacon grease to fry her eggs , spoon the hot grease over the yolks and call them….”Lacy Bottoms”. That’s the only way I fry them for my family. Recently saw a video where you separate the egg and fry the white first . Then you add the yolk on top of the crispy white and cook until the yolk is to your liking. It beats having to flip and/or baste them and for runny yolk fans this is a great technique.

This is similar to a fried egg you'd get a cantonese restaurant with something like the bbq pork and rice. Very cool!

Grew up eating that type of egg. We called it lacing or putting lace on the egg. We never flipped the egg just threw a lid on the pan and just steamed the yolk to people's liking. Also used the bacon grease to fry the eggs use high temp oil when we're not going to have any bacon.

There's a French technique where you actually deep fry the egg. You use two wooden spoons to mold the white over the yolk to make the white completely surround it.

i use bacon grease & I also do the flip. I like a fish spatula bc its thin & flexible and it allows excessive grease to drip into the pan. Season on the plate. Love your stuff, new sub!

If you keep the pan really hot, you could get both sides of the egg brown and crispy but keep the yolk runny. Was my daughter's favorite way to have her eggs when she was younger.

I'm positive those eggs are heavenly. I just don't want to clean up afterward and find out later that I missed half the grease splatter on the stove, the floor and everything else nearby.

I have never fried eggs any other way! Or my Mom before me!! Yummm!! Things on top of eggs, the eggs on top of hash browns, toast, etc... same fried eggs!! I didnt spoon oil or bacon grease over to cook...I used the spat to splash it over....

Do you have an induction hob? Is there a risk of damaging the hob by getting an empty pan (especially a cast iron) so hot? I'd be afraid of scorching the hob.

I love frying eggs in mustard oil. You need to first heat the oil on a very low flame with some chopped green chilies and garlic. Remove them once they are properly fried and then increase the flame and heat the oil till it smokes. Fry your eggs in this flavoured oil and garnish with the fried chillies and garlic

Is that a cast iron pan? I cook my fried eggs on medium heat until the edges get crispy, then I flip them or jus break the yolks. I like cooked yolks

Okay, the eggs look great. I still often scramble mine, but Mike's fried eggs are gaining traction, and I'm getting more use out of my thin spatula. But please tell us more about the Thrice-Boiled Beans -- none of searches have turned up anything about them.

I fry over a medium low heat in a non-stick frying pan and I cover until the top is cooked but the yolk is still runny.

Definitely going to try this. How I fry my eggs is that I start in a medium heat on my cast iron, crack the eggs in then I cover and turn the heat off after about 30 or so seconds. After a minute or so I flip them, and leave them in the pan for about another minute. There's usually some crispiness, but the yolks are just beautifully thick and gooey this way which is how I like them.

Is there a trick to getting it more crispy and less rubbery? Mine doesn't really come out as crispy as I would like. When I hear the word crispy, I expect it to snap to break apart under pressure from a fork like a potato chip. Mine seems to require sawing it apart which makes it more on the rubbery side.

Use a wok, and you can spoon hot oil on top of the egg so you don't have to flip it.

I love fried eggs whose edges are crisp. My Mom used to make them with crispy edges. She made them like my grandmother and great grandmother made them. Mom would have been 89 this year and I'll be 60 in a month so yeah, people have been doing this a very long time. It's funny I absolutely despise any type of browning on scrambled eggs, it, IMO tastes wrong and nasty.

I like the yolk runny and the white set. Over easy, or add a shot of water and cover if "the flip" is too scary...aka basted. Just don't break or overcook the yolk please!

Chefs call them over easy. If you don't flip the eggs, it's called Sunny side up. How can you not know about that for someone who likes to cook?

You ruined me for fried eggs with your Genius recipe for starting with a cold pan, adding heavy cream and then cooking the eggs in the cream. That did it! Gone was the slightly ammoniated whiff of egg white. The whites actually taste good! to me, this is the only way an egg should be fried.

The only way to cook fried eggs where you control everything is to have some extra oil in the pan and then crack and egg in it. Once the outside begins to get crispy the. You tilt the pan and baste the yolk with the oil. Each spoon of oil poured over the egg cooks the yolk and you will see the color of the yolk begin to change from raw yellow to opaque to light pink. If you want to have a hard yolk then you baste it until it turns a firm yellow again. Any other way is amateur and leaves everything to chance. Flipping an egg over is an amateur move.

Please, please do not flip eggs as shown in this video. To minimize hot oil splatter,ing on your face or body, you should always flip away from yourself.
