Miso Tonkotsu Ramen

This time I`ll show you how to make typical Miso Ramen. You may easily use this miso tare for various types of broth, so try it!
Ingredients
*Tare*
Seaweed 25g
Apple 1/2
Garlic 1 clove
Ginger 15g
Sesame oil 1tbsp
Chilli Pepper 1pc
Miso Paste 150g
Soy Bean Paste (TOBANJAN) 100g
Sesame Seeds 10g
Sake 2tbsp
Soy Sauce 2tbsp
Sugar 10g
Salt 6g
*Broth*
Pork Spines 3kg
Water 3kg
*Chashu*
Pork Belly
Soy Sauce 300cc
Water 100cc
Sake 100cc
Garlic 1 clove
Ginger 10g
Green onion 25g
Sugar 50g
*Noodles*
Bread Flour 200g
Cake Flour 100g
Water 130cc
Kansui (or baking soda) 4g
Salt 4g

Hi Motioki, I've just made your miso tare... it's sooo nice. Thanks for putting this recipe up. I'm using it in another Tonkotsu recipe that had seafood in the tare recipe so I started looking elsewhere and I found this video..... perfect! Thanks again.. I've just subscribed

The best ramen I’ve ever eaten in my life was Sora in Sapporo. 2nd favorite, was Yoshimuraya iekei ramen in Yokohama. I also loved the rich tsukemen from Menya Musashi Bukotsu Gaiden in Tokyo. Please make recipes for those, hehe.

That line at Yoshimuraya iekei is brutal though haha, it never ends! Sometimes i walk over, look at the line, look over at ikinari and then go get a happy steak lol. The thick noodles are crazy filling too, I'm a big guy and a small bowl has me stuffed

What about broth after cook for 3hours is it keep the water and go to next step broth 2 to keep cook?

Thank you for your recipe! They look so delicious! May i know if pork spines and pork spare ribs are the same cut? I am having a hard time finding pork spine in my country!

Lovely video! Looks delicious 😋 Could you make Tonkotsu Tantanmen next? It is my favorite ramen, because I love spicy food 🌶. Also, I once saw someone replace water with ramen broth when kneading homemade ramen noodles. Do you think that is a good idea? 🍜

do you rest your noodle? when i used fresh cut ramen noodle without 24 hour resting, the noodle taste funny. taste little bitter and a bit soapy. taste delicous after 2-48 resting in the fridge though

Why does the broth come out darker than in your other video? Sometimes I see a whiter colour and sometimes it's more towards brown. Is it the cooking time?

hi it's probably because you aren't washing/cleaning the bones before boiling. You should do a pre boil to draw out blood and other scum that will leave your broth a darker color. Read Kenji Lopez-alt's serious eats article about tonkotsu ramen to learn more!

Miso to doubanjiang ratio is low, it feels like the tare ia gonna be little bit on the spicy side. Dont you think?
