[Eolgali Young Radish Kimchi]
1. Trim 2 layers of dried cabbage and 1 layer of young radish, cut into bite-sized pieces, and wash twice.
2. Dissolve 1 cup of salt in 3L of water, pour in the browned cabbage and young radish, turn over, press down firmly and marinate for about 1 hour (turn over once in the middle)
3. Cut 6-7 red peppers, 1 apple, and 1/2 onion into a blender, add 1/2 cup of fish sauce, 3 tablespoons of rice, and 1 cup of water and grind
4. Wash the pickled cabbage and young radish and put them through a sieve.
5. Pour the ground powder into a blender in a mixing bowl, add 1/2 cup of plum syrup, 3 tablespoons of garlic, 0.5 tablespoons of ginger syrup, 2 tablespoons of sugar, and 3/4 cup of red pepper powder and mix
6. Season with fish sauce to make it salty, then add the washed and peeled cabbage and young radishes and mix.
7. Slice a handful of chives (scallion), shred 1/2 onion, add and toss to complete.
[Eolgali Young Radish Bibimbap]
1. Put rice in a bowl, add kimchi, grated young radish, and fried egg.
2. Add red pepper paste, sesame oil, and sesame salt to complete
[Cheonggukjang]
1. A few pieces of kimchi, a piece of radish 1cm long. Cut 1-2 shiitake mushrooms, 2 cheongyang peppers, 1 red pepper, and 1 green onion into fingernail-sized pieces
2. Cut 1 tofu
3. Put 800ml of rice water, 1 tablespoon of soybean paste, and 1 dashi pack in a pot, add sliced radish and shiitake mushrooms, and boil for about 5 minutes.
4. Take out the dashi pack, add the sliced kimchi, 1 tablespoon red pepper powder, and cheonggukjang, and boil for about 3 minutes more.
5. Add sliced tofu, red pepper, and green onion and boil a little more to complete.
