From my experience with bought semi fresh mochi: The texture changes slightly when they're cold/refrigerated, just let it sit in a normal temp area. Like 20 minutes or so, and it should go back to it's original texture. But don't keep them for longer than,.. like, 3 days? Their texture gets less soft and stretchy and more chewy and dense. A clear difference imo and I personally do not like it. But you might, so if you accidentally keep them for longer, try it for yourself. Tho ofc don't eat them if they have gone bad. I am trying my hands at this recipe in a few days myself. So idk how these homemade ones will fare yet. Best of luck with your mochi plans!
