Mochi with Oreo filling.

INGREDIENTS YOU WILL NEED
100g glutinous rice flour
30g cornstarch
30g granulated sugar
180g milk
20g unsalted butter
Filling:
250g heavy cream
15g granulated sugar
Strawberries
Oreo crumbles
HOW TO MAKE MOCHI
1. Mix glutinous rice flour, cornstarch, granulated sugar and milk until smooth. Sift once, cover it with plastic wrap, prick some holes on the plastic wrap, and steam until fully cooked (about 20-30 minutes). Or you can microwave it until fully cooked (about 4 minutes).
2. After it is cooked, mix the butter in or beat the butter in using the stand mixer. Beat until it can form a ball. Or you can mix the butter in with a spatula and when the dough is cool to touch, knead into a ball. Wrap the dough ball with plastic wrap, and set the dough ball in the fridge to cool for 1 hour.
3. In another bowl, beat heavy cream and sugar until thickened. Set aside. Wash and chop the strawberries into small cubes. Set aside. Crush some Oreo, set aside. You can take any fruits you like as filling.
4. Take the dough ball out, knead and divide into equal pieces. Roll each piece into a flat round piece. Put in whipped cream and strawberry cubes or Oreo crumbles. Wrap it up, and put in a cupcake liner and serve.

1) Always use whole milk; 2) Microwave ovens are a complete disaster for this recipe, and it's probably the root of your problems. Use a pan on low heat instead, until you get a soft and elastic dough. I hope this helps.

It looks so easy and so clean surroundings…i really dont understand how people dont get their kitchen flipped over with flour on floor and counter and bottles caps everywhere when making any sweets/ baking/ cakes.. thats why i dont like making sweets cuz i hate the 2 hours of cleaning afterwards 😅

I am not criticizing the author. However, it is also true that some foreigners who come to Japan point to Japanese mochi and complain that 'this is not mochi.' I wanted to reduce such misunderstandings as much as possible, so I commented. Japanese mochi is made by pounding steamed glutinous rice with a pestle and mortar until smooth. No milk or sugar is added to the mochi itself. The finished mochi is seasoned with Anko (red bean paste), Kinako (soybean flour), and soy sauce. On New Year's Day, it is customary to eat a dish called Zoni, which is mochi cooked in a Japanese-style soup.Some Japanese prefer western flavors such as cheese and pizza sauce. Recently, many households make mochi with an electric mochi maker, and more and more households buy mochi instead of making it at home.

This is not Mochi! To make Mochi you just need cooked glutinous rice (mochi rice) or glutinous rice flour (mochiko) and water.

Сама пробовала делать и в микроволновке и на сковороде, получилось отвратительно. Не просто на любителя, а именно отвратительно. Как будто сырое тесто ешь. Маскарпоне тоже был плохого качества. Не рискну еще раз переводить продукты, всё-таки не дешево.

Did you use glutinous rice flour? Try to pull and stretch and knead the dough for a few more minutes. Or you can use the stand mixer to beat it until it gets the right consistency as I show in the video.

No don't use normal rice flour Glutinous rice flour is made from sweet short grain Japanese rice. Normal rice flour won't be chewy

そうですね まあ、もちとしてにほんぶんかを広めてもらえるのはいいことですし 外国では白玉粉とか高いし手に入りにくいですから😭 餅米も日本の売ってるの見たことなくて泣 わたしは韓国のチャプサルトク粉(餅米粉かな?)使って試行錯誤してたけど無理でした笑笑

@@iCupboard takes hours, u have to knead the dough for ages, get the perfect temperature, perfect measurements, perfect consistency, and mould it to perfection. There are just lots of things to do

В средине крем, против сухой начинки я тоже против, скорее всего это какая-то крошка типа орео, очень опасная штука - ребёнок укусит и в дыхательное горло, я добавляю ягодный джем. ТЕсто рисовое действительно странное, у меня после вымешивания с маслом, при соблюдении грамовок и типа рисовой муки превратилось в клейстер, лучше и дальше буду делать моти по своему рецепту, для того, чтобы этот получился нужно много больше подробностей.

I just made it today. It was sooo delicious & stretchy. Exactly what i want. Here are some changes that I’ve made. - I steamed it cos I feel like the microwave is a bit hard to control & steamed for 10’ or some around there. - I used potato starch cos I ran out of cornstarch. - I misread the butter amount & pretty sure added like 30- 40’ gram into the dough :))). - Didn’t have enough starch during the shaping so I just used tad more butter & its very elastic & quite difficult to mold it so I suggest you guys use saran wrap so it’s easier to transfer & store individually in the fridge. - I used whipped cream with some mascarpone & ate one after giving 5-7’ in the fridge & it was so delicious. Not sure abt the rest of the batch are goin to be harder as I used a bit more butter than the recipe called for but for now it’s a 10/10. Def recommend.

Butter and dairy products are not used in traditional recipes-which are zero fat (unless you add fat to the filling).

I was about to say, so I would love to try mochi one day, but when I saw the butter (which was a European invention) I was thinking this can't be a traditional Japanese recipe (either that or mochi can't be a very old traditional food). But then I saw your comment and I guess this must be a modern improvised/updated version.

@@ecclesiaxxi6210 traditional mochi is made with glutinous rice, not rice flour. I’ve seen a lot of people make original mochi at home by mixing cooked glutinous rice in a stand mixer which replicates the pounding of the rice which is how it’s done originally. You can also just pound it with a rolling pin if you don’t have a stand mixer though 😊😊

yes as said in the name, for the stretchy texture you need glutinous rice flour.But if you have Japanese rice flour which is already sticky and glutinous, it's okay .

I dunno if it’s the flour I’m using or it’s not suited for a taro filling but this is OK at best. Seeing as you’re using it for sweet filling, I’m guessing it’s the later. I hope it’ll be a different story when I try out an egg custard filling

Это конечно все хорошо, только странное дело, что при таких пропорциях получилась более густая консистенция. И это реально странно. Для продуктов из СНГ не подходит рецепт. upd: Короче, либо с граммовкой что-то не то, либо у нее какие-то другие компоненты, но при аналогичных продуктах и граммах получается плотноватое тесто, слегка размягченное маслом. О том, чтобы оно так тянулось и речи быть не может. После микроволновки и замеса в машине оно скорее напоминает пластелин. При попытке растянуть, просто отрывается, оставляя отрыв в виде уголка. Т.е. чтобы оно было как на видео и речи быть не может. Повторюсь еще раз- еще на стадии растворения компонентов в молоке.

Короче, мочи получились, НО! При замесе в машине я добавила немного горячей воды, потом замесила руками, добавив чуть крахмала, а позже прогрела еще раз в микроволновке. Остудила, и еще раз вымесила руками. Такая текстура, как у автора у вас НЕ ПОЛУЧИТСЯ с обычной рисовой мукой, как у меня (должна быть специальная клейкая), но у меня получилось добиться бархатной текстуры. Короче, экспериментируйте.
