Hi there, love these videos. I was wondering how long would it take to melt 3kg of chocolate in this machine and what temperature setting would you put it on?

Hello, it will some time. I'm talking a few hours. I would suggest that you melt the bulk of your chocolate in a double boiler to make this process much quicker. When melting it, you can easily keep the knob ( temperature controller ) at 40 or 50. This machine melts chocolate slowly. Once you have most of your chocolate melted, and at say 40 degrees C, adding more new chocolate ( un-melted ) will melt much easier and quicker. Hi, would this also work with the 12kg machine? Would I be able to separate it into 4?

The machine will work exactly the same in terms of heat, but I'm not sure if you can get 4 smaller metal containers for that sized model. I'm encourage you to get in touch with Mol d'Art in Belgium via email. They will give you the info you need.

Is this a 1/3 hotel pan 4 in deep? Does putting the lid on the pan cause condensation to build?

I'm not sure of if one would consider this a hotel pan, but I can tell you that there is zero condensation. You would need very high temps for this to occur. You must keep your chocolate in the "working range" that is stated by the chocolate you purchase.

Could you tell me what the smaller pans are called or the dimensions? I ordered this melter based on your videos and it won't be here until Friday. I'd like to get these pans before then 😀. Thank you for all the info!

Hey thanks for the video! Where can I find these 3kg pans and which brand makes them? The only ones I came across are round ones for the smaller d'art melter, but not rectangular like you have in the video.

You mention in an earlier Reply, "This is not a chocolate tempering machine. It keeps chocolate warm and in temper all day long." But the video title says, "Mol d'Art chocolate tempering machine with 2 types of chocolate..." Hmmm.... So can a person temper chocolate with this machine using the seed method and adjusting the temps accordingly? Thank you.

You can temper chocolate in this machine. Many people will purchase this model because they can manually temper the chocolate and keep it tempered all day long. It is a 100% manual procedure. There is zero noise, and this is what appeals to many people. In my other videos you can see the other chocolate tempering machine that I use that is motor driven and makes noise, in fact a lot of noise - but it is 100% automated, and even a total beginner can temper chocolate in it, and perfectly I might say. That said, this machine is used in most if not all professional chocolate shops. Chocolatiers will temper chocolate in a different machine, but then keep it in this machine because it will keep it tempered without much additional work from the chocolatier. Yes, you can temper your chocolate using the seeding method and then keep it "in temper" in this machine. Keeping the lid on is important, and also stirring it through out the day is a must, and also using a heat gun to add heat if and when needed. ( there are many videos on Instagram showing chocolatiers using this exact machine where you see them using a heat gun from time to time )

how do you set a seperate temp for each type of chocolate to maitain it in temper for longer period of time. there is only one temperature control on the machine.

Hi Cyril, there is one temp. This is *not* a chocolate tempering machine. It keeps chocolate warm and *in temper* all day long. Chocolatiers will temper the chocolate in machines or by hand, and then put it into this holding machine. There is a good range where all chocolates can stay in temper. Have you seen my *ChocoVision* chocolate machine videos ? This is an electric chocolate tempering machine that is motorized. It automatics 100% the tempering process.

Yes, but doesn't the white chocolate has a different working temp than dark chocolate?

That is correct. It does. Not only does white chocolate have a different working temp vs dark chocolate, milk chocolate also has its own set of working temp parameters.

Hi, If you can educate me as to how would you temper two different types of chocolates with two different tempering temperatures with single thermostat Melter for both ? May be I can save some money here. Thanks

That tempering is easy to do, the tempering chocolate work temps are not that different. White chocolate for example has an upper limit of about 43 degrees C, and dark chocolate has a lower limit of about 46 degrees C. The temps are close enough that you can do this in the same machine with practice. Please do a bit of Googling to find out a lot more info. The Trick - heat gun. If you ever walk into a chocolate shoppe you will often see different chocolates in-temper in the same machine. What you didn't see is the chocolatier working on those chocolate using a heat gun to get his correct temps. You can have your machine set to the limit of the chocolate that requires less heat, and then use a heat gun to add heat to the chocolate that needs more heat. Little tricks they use everyday to save money. A machine like this is about $1000, a heat gun is about $40, so yes, big money savings. Thanks for stopping by and watching the video.
