A staple in Maharastrian kitchens, Moramba is a sweet accompaniment made of mangoes that can be stored all year long!
The making of the Moramba is a long but easy process! It takes 4 days to make and 10 days to be ready to be consumed. So, let’s get into it!
Ingredients:
2 Hapus Mangoes - ripe but firm
150gm sugar
1/4 tbsp citric acid
A pinch of potassium meta bi sulphate / KMS powder
Day 1 :
Method :
1. Wrap the firm ripe mangoes in a cloth and hold it in boiling water for 5 mins ( holding mangoes in boiling water makes peeling them easy)
2. Once cool, peel the mangoes
3. Cut mangoes into big pieces
4. Add to a vessel, add 150gms sugar, toss to mix well.
5. Keep aside.
Day 2:
1. Bring the mango and sugar mix to a boil and boil for 5 mins
2. Mix gently to avoid the sugar sticking to the vessel and turn the flame off.
3. Let the vapour out, cover the vessel and set aside.
Day 3 :
1. Boil the mango and sugar mix for 5 mins, turn the flame off.
2. After 5 mins add 1/4 tbsp citric acid
3. Turn the flame on and mix well
4. Let the vapour out, cover the vessel and set aside
Day 4 :
1. Boil the mango and sugar mix for 5 mins and turn the flame off
2. Add a small pinch of potassium meta bi sulphate/ KMS powder to a small bowl, add a little of the sugar syrup to it and mix well. Add the powder that mix to the mango mix.
3. Set aside in a jar for 8-10 days before consuming.
Remember, after adding the KMS powder do not consume the Moramba for at least 8-10days! After that store it in the refrigerator and enjoy all year :)
