This Kathal biryani or Jackfruit biryani recipe is a mildly spiced dum cooked biryani made with raw unripe jackfruit, basmati rice, yogurt and lots of spices and herbs. Jackfruit is also called as kathal in Hindi language. This is a gluten-free dish and makes for a comforting, healthy and satisfying vegetarian biryani variant.
This recipe of kathal ki biryani is like the way my mom makes biryani. I cut down on a few steps to make it easy for me.
It is best to use aged basmati rice to get best texture, flavor and aroma while making any variety of biryani.
This kathal biryani is a delightful dish. For best taste and flavor have it hot or warm with a side of raita or yogurt. You can also pair it with Mirchi ka salan or sliced onion for a filling and hearty vegetarian biryani feast.
The leftover keep well for about 1 to 2 days in the refrigerator. You can reheat the jackfruit biryani by lightly sauteing it in a frying pan or steam for a few minutes in a stovetop pressure cooker or the Instant pot.

Ingredients for Kathal Biryani (for 4-5 servings )
For Boiled Rice -
Basmati Rice - 2 cups
Small Cardamom- 4
Cloves - 4
Bay leaves - 2
Lemon Juice - 2 tbsp
Water - 5-6 cups
For Kathal Biryani -
Oil - 1 cup
Kathal - 300 gms (peeled and cut into small pieces )
Potato - 4 medium size cut by 2
Cashew Nuts - 10-12
Kishmish - 10-12
Onion - 7 medium size (5 for Barista and 2 for Biryani masala)
Tomato Purée - 2 big size
Ginger,Garlic and Red Chilli Paste - 2 tbsp
Jeera - 1 tsp
Haldi Powder - 1 tsp
Red Chilli Powder - 1 tbsp
Black Pepper Powder - 1/2 tsp
Garam Masala - 1 tsp
Biryani Masala - 2 tsp
Curd - 3 tbsp
Salt according to taste
Coriander leaves - 1 cup chopped
Mint leaves- 1 cup chopped
Milk with pinch of kesariya food colour- 1 cup
Desi ghee - 1 tbsp
