Never seen someone put in the work to chip away all the plaster on a renovation. Every company Ive been with just chips below the tile a few inches and applies a scratch coat to the existing plaster. I love seeing that you don’t cut corners.
This is a highly controversial topic you are bringing up and you are 100% correct scratch coat plaster jobs are subpar from every aspect However this is also a regional issue and some regions of the United States this is considered industry standards such as some areas of Virginia the east coast and the south and I think this has to do with humidity moisture and environmental factors perhaps even dew point
