sliced Jalapeno Chillies
sliced Garlic
Vinegar (Distilled white vinegar works)
Filtered water
Salt
Sugar
MSG
Pickle Juice ratio is equal parts water and vinegar (1:1)

I’ve always added a bit of MSG when making pickles with great success. I have found that it’s best to add a little extra salt when doing so. But that might just be me.

Your peppers look tasty! Try a meat slicing glove for your mandolin. I have also used a fork to spear those small veggies. :)

MSG... It's weird. It's not very accepted to use in food here in Scandinavia, but it's a staple in a lot of Asian food. It's not that it isn't used at all in Scandinavia, because it is used as a food additive, but there are warnings out about not eating too much of it - and "too much" in this case seems to be not very much at all. I don't know how I am supposed to know who I should listen to, the different doctors and government bodies over here in Scandinavia who say it *can* be dangerous, or people in different parts of Asia who use it in food _(basically)_ all the time..? I'm sorry, I hope this doesn't offend anyone. I'm seriously just asking what I should do and who I should listen to. These pickled jalapeños look fantastic, though! I absolutely love jalapeños in all forms, so thank you for the recipe!

I’m not sure what the Scandinavian recommendation is based on, but there have been lots of studies that show MSG is perfectly safe. It’s also naturally present in lots of foods you may already consume, so you’re likely eating more than you think anyway.

It sounds like you got the same propganda that the US got when they realized Asian food was becoming more popular than US food, you know BEEF. But like the other person said it is a natural additive and occurs in many other foods. Like salt it enhances the flavor of food.

To add to the above comment, any food you buy that lists "natural ingredients" in its ingredients almost definitely has MSG. It's super common and multiple governments around the world have done studies and confirmed that it is perfectly safe. The study done in the 60s or 70s that said it wasn't was flawed, they injected MSG into rats but the amount was ridiculous - 4g msg per 1kg body mass. That's like injecting 380g of anything into someone who weighs 80kg and then saying it's bad because it affected their body negatively.

It's weird, because the stigma in the US seems to go back 50 years, but here in Finland I remember it suddenly becoming a thing sometime around the noughties I think? Can't remember why this happened, such as if there was a new study or something, but suddenly all the meat producers were advertising their ham as free of MSG. Despite the fact that a lot of their produce didn't have any to begin with, but hey marketing! As far as I know there is no evidence of any major or even minor long term harms, apart from increased sodium intake (same as salt). Some sort of mild and very temporary allergic reaction may occur, but it requires ingesting rather large quantities of it at once. It may have some adverse reactions with some asthmatics, but afaik the results aren't very definitive. The "Chinese Restaurant Syndrome" is not a thing. That's what I've seen or heard about it, seems safe to me.

I hope you didn't get the GMO'd jalapeño peppers. In the US the USDA has allowed the peppers to be changed so they aren't hot anymore. Which is absolutely inappropriate. They are selling us green peppers instead of jalapeños. I had to stop buying them. If I wanted a green pepper I would buy one. I buy JALAPEÑOS for their heat.😡

I think it's regional too. Or according to who is doing the buying for your grocery store. I'm in south Texas and we still have spicy jalapeños but I spent time in Tennessee and they were even milder than poblanos there.
