These muffins are moist, tasty and quick to make. Make them with kids, they will love it!
BLUEBERRY MUFFINS
1 box White, Yellow or Lemon Cake Mix
1 tsp baking powder
2 tbsp Flour
3 Eggs
2/3 cup milk
1/3 cup Vegetable oil
1-1 1/2 cups rinsed Blueberries, fresh or frozen (I prefer the mini blueberries)
Streusel Topping - Optional
⅓ cup flour
⅓ cup brown sugar
2 tablespoons unsalted butter melted
Place the cake mix, baking powder and flour to a large mixing bowl
In a separate bowl, whisk together the eggs, milk, and oil
Stir the wet ingredients into the cake mix ingredients until just combined using a rubber spatula
Fold in the blueberries
To make the streusel, combine the flour, brown sugar, and melted butter in a small bowl until the mixture resembles wet sand
Line a muffin tin with 12 liners
Distribute the muffin batter into the muffin cups. Top with the streusel ingredients that have been mixed together
Bake the blueberry muffins at 350 degrees for 18-22 minutes or until a toothpick inserted comes out clean
BANANA BREAD OR MUFFINS
15 oz box of yellow cake mix
2 eggs
1 teaspoon vanilla extract
½ teaspoon cinnamon
1 ⅓ cups mashed overripe bananas
⅓ cup oil or melted butter
1. Add all ingredients to a large bowl and mix until combined
2. Grease a loaf or muffin pans (can also use paper cups in muffin tins) & pour the batter in, smoothing out the top
3. Bake the banana bread at 350 degrees for 50 - 60 minutes for bread or 20-22 minutes for muffins, until a toothpick inserted comes out clean
4. Allow to cool completely before cutting and serving
