Just wondering why you use hard white wheat as opposed to soft white for muffins? I'm new to milling our flour and still learning which type of wheat to use for various baked goods. Appreciate all your videos!

Great question! First, this was a recipe I got from some other great home-milled bakers and they used hard white. Second, hard white is most similar to all purpose flour from the store and is what I used to use for muffins. Lastly, if you check out my pumpkin muffin video, I use part hard white and part soft white for a softer result. Soft white helps with fluffiness and hard white provides more structure. Hope that makes sense!
