Huo guo (hot pot, also known as steam boat) is a giant pot of boiling soup and ingredients that you cook at your table. The main difference between malatang and huo guo is that huo guo is meant to be shared with other people, while malatang is served individually. In a malatang restaurant you pick your ingredients and soup stock, it will then be cooked behind in the kitchen before being served in a regular soup bowl. That's another difference between huo guo and malatang, huo guo you cook while you eat, while malatang is cooked first then served. There are also many different kinds of soup stocks for both huo guo and malatang, so even if you don't like mala flavour there are many other options. Another variation I recommend is mala xiang guo - my personal favourite. It's just hot pot ingredients of your choice stir fried in mala flavour, but it's so delicious!
