A richly flavored soup, spiced with curry leaves. Perfect for a cold day, serve with a dollop of tangy sour cream.
It is said that this used to be a hot favorite among the British officers when they were in India.
Mulligatawny Soup features a large set of ingredients including coconut milk, onions, curry leaves, Apples, Coriander and dal, spiced with an elaborate masala and hints of ginger and garlic. You can have it as a filling brunch or supper!
Ingredients:
Olive oil 2 tsp
Curry leaves 20 leaves
Onions sliced 2 tsp
Garlic 2 tsp
Ginger 2 tsp
Sliced granny smith apples 150 gms
Coriander stems 7 steps
Salt to taste
Soaked and Boiled Arhar dal 150 gms
Soaked and Boiled Masoor dal 150 gms
Garam Masala 2 tsp
Chicken stock 1 Cup
Coconut Milk 100 ml
Description:
1. Heat olive oil and add curry leaves, ginger, garlic, onions and
sauté till the onions are transparent.
2. Add the apples and brown.
3. Add some the coriander roots
4. Add some salt to taste
5. Add the Boiled and soaked Arhar dal and Masoor ki dal to it and
add seasoning, spice powder to it and mix it well.
6. Add chicken stock and cook till the time the soup is well
amalgamated.
7. Pass soup through a strainer into a bowl.
8. Finish off with coconut milk, and add the seasoning to your
taste.

An interesting variation of mulligatawny soup. I had not thought of adding apples. You may know chef Bhaskar, that Mulligatawny soup is Indian a National Soup. Also of Sri Lanka. It has a very interesting history. It came to India from Sri Lanka brought by Tamils who relocated to then Madras State around 18th century. It was called Milagu Tanni, literally meaning Pepper water in Tamil. It is closely related to dal Rasam of south India. It was a purely vegetarian soup in its original versions. In another hundred years it had found its way into culinary books. Then caught the interest of wider public, including the British who made milagu tanni into mulligatawny😀 It now has many variations and using chicken broth has become more a standard recipe now. In our circles from Bangalore and south Karnataka, we generally make chicken mulligatawny soup from country chicken. It is given as a health soup to new mothers, those recovering from fevers and colds etc. of course healthy people also love this soup, especially in winter season. Anyway nice to see your version and I will try this with apples soon. Thank you for the video, though I am seeing it after quite some years since you posted.

Recipe isn’t bad but I never understand how a 6ft tall chef has a work table that’s by his thighs!! C’mon how much more unergonomic can it get! Poor guy will have a pulled back muscle by the time soup is done!
