My channel doesn't get the most views out of all the "AppSheet Channels" out there - to my horror there are some out there spreading factually incorrect information, yet they've got tens of thousands of views on their videos - so comments like this help continue driving me forward. Unfortunately this is not a possibility currently with AppSheet. The system requires that someone interacts with the app in order to "get data" from the app; so we can't say "get a new location every 5 seconds" or something like that. You might design a system that makes users hit a button every now and then, maybe marking off steps on a route or some other checklist they've got... and from this you can get a new latlong. No real good solutions directly inside AppSheet here; there are a few outside though, if you want to integrate separate apps that you can install and run. Check the community on this, there's some good threads.
