I like this and been cooking for a while a it never ceases to amaze me the flith and depravity that I see coming from from hospitality people but its all just a cleaver ploy to mask the commitment dedication and self sacrifice that is required to succeed in the food game. Philly is a great city. Everyone is nice, and it's a beautiful town. Before I ever went there, I had a bad view of them from sporting events. They're not so nice at those, when they're in other states. lol
alot of ppl who eat and enjoy authentic chinese are, i can relate even though i know its not an attitude i should be displaying to market good food. the thing is u have no idea how many ppl when they ask me if i eat generals chicken, orange beef, sweet sour fun fuk, and i say no? they go, " so you eat dog ??!"

han is not crazy, han is passionate!! He is passionate about changing people's perception of chinese food. Chinese food should not be cheap , its quality nutritious food and has been for thousands of years. You don't cultivate a culture, a civilisation on shitty bad quality food. Applying fast food techniques and ingredients the result is comprimises.

Im a restaurant owner in china, from my perspective, authentic chinese food is not authentic anymore when its made outside of asia. You get your ingredients such as spices, peppers, meats, tofu, condiments etc.. in the Western world the food isn't authentic anymore! The food have already made to fit the western standards e.g. cleanliness, oil use, food content build-up etc.

I usually love your video's and wish to see you continue to make more, but I had to stop watching this video because of how annoying the chef is. Brad Spence clearly has no knowledge about cooking; "Italian American food is soul food.", "That's a classic Roman parsta you'll find anywhere in Rome.", "He was kinda disappointed in the way sandwiches were in Philadelphia." WTF??
