Who better to be the first chef in Munchies from our nation's capital than a guy with a Slayer sticker on his sausage grinder? Kyle Bailey is the chef at Birch & Barley, one of DC's best restaurants. He works alongside his wife, Tiffany MacIsaac, who's also the genius behind the restaurant's innovative desserts and pastries. Birch & Barley is also known for having one of the country's most comprehensive beer lists, which is overseen by Greg Engert. Kyle brought Tiffany and Greg out on the town to show us two of his favorite spots. First was Radius Pizza, where chef Todd Wiss cooked up a lot more than pizza, and then it was on to the cocktail bar Room 11 to make sure Kyle was properly snackered before he had to cook for us again. hahahahaha, I'm American, but I do prefer the current Euro/Continental style of fork wielding. I guess the American style forksmanship was how it used to be done, and we didn't get the memo when you guys switched it up!

Im sorry but when I go out I order a starter, main and desert. But the main is still the same size as a normal dinner. They don't make it smaller so you can have a starter and desert.

I can't afford that kind of food either, but the point of make small portions is precisely to eat different stuff, not to eat less. I'm a stoner since 2002 and I prefer to enjoy my munchies with nice and varied food (Made by myself or a friend), not with pepsi and doritos.

Well, you are supposed to order several dishes, that's why they're small. They usually don't cost as much as a full meal, so I don't see how this is supposed to trick people into buying more.

damn straight! 20$ for 3 bites of food. FUCK THAT! If you eat that little you will just get more hungry. If its 1/3 the size it should be 1/3 the price. Hell, even eating out is pointless anyways. Buy a cook-book for 10 bucks and cook it yourself! Stuff you make with your own hands tastes better anyway. Its even better if you grew/killed the stuff you cook. Grilled bass over a camp-fire with some salt and butter = best meal I have ever had....because I caught it.

Most restaurants like this just get people drunk and rely on the guests to entertain themselves. Don't get me wrong the food is nice but the experience is usually the biggest thing with restaurants like this.

I love most of these restaurant pieces, not for the food (which I adore), but for the bonding that these folks have for each other, even though they could consider themselves competitors. With small businesses it's not about personal success above all else, it's about helping each other succeed and giving props to those that deserve it. Great filming and editing on these pieces!

But this does not seem to be a three course meal, it seems to be a tasting meny, which means that you eat many smaller dishes to be able to sample as much as possible of the restaurant's cooking. Really, is it relevant for this restaurant's meny what your restaurant serves? I don't have an indian restaurant close by, does that negate the existence of indian food?

I don't remember ever saying that they were hipsters. I actually think that they're extremely down to Earth. Also, how do you know I'm not cultured? Because I think that certain restaurants are dark, that means I'm not cultured and lead a less fulfilling life than them? Thanks for the info :-)

I love trying new beers. I think alcohol and spirits is such a individualist preference. Like saying a $10 wine is inferior to a $20 bottle because of price. My preference is wheat, Abbey, and Trappist ales. Who is to say what one is better than the other.
